Busy Day Chicken And Summer
Squash
I was in living room late yesterday afternoon trying to get some
work done and some spring cleaning finished up as one of my favorite summer
meals was cooking away on the stove.
The wonderful aroma wafting though the air from the pot
cooking in the kitchen was driving me crazy and making me very hungry. I tried
to ignore the hunger pains and
get the work done but it wasn’t working finally I gave up and went outside and worked in my garden that
helped a little since I was not longer smelling the chicken cooking.
When I came back inside my dinner was ready and I could finally sit down to
this delicious meal.
I decided to make this meal last night because I knew I was going
to have a very busy day grocery shopping gardening spring cleaning and doing
some listings on EBay.
It could be anticipated I would be hungry after a day like that so
I last night I took a big pot out of the cabinet and put the chicken and the
vegetables in it. I then poured some Italian dressing over it to let marinate
overnight.
Relax it’s not complicated its easy I just like to marinate the
vegetables and chicken over night but you can do it the same day if you would
like it’s really up to you. If you do start it the night before it will be
ready to put on the stove when you get home from work or shopping.
This morning I picked up my neighbor from work she asked me
about what I had made for dinner last night because it smelled so good. I told
her I had made chicken and vegetables for dinner.
I often share what I make with her as I did this time
because
she likes the ideas I come up with and we share a similar taste in
food .
She asked me a good question could she make this dinner by
putting it in the crock pot on low and letting it cook all day while she
worked? I thought about it and yes of course that would be another way to do it
and it might even be an easier way of making this dinner for a hard working
person with very little time to cook meals.
I have made it one way for so long I never thought of the crock
pot but next time it is marinated I will give it a try.
It should work just fine.
For now though this is how I made this meal yesterday.
I started by putting about four chicken pieces in a pot (chicken
still on the bone) then I cut up some corn yellow squash onion and potatoes
and then I
covered it all with Italian dressing and then let it marinate overnight in the
refrigerator.
After I let it marinate overnight I took the pot out of the
refrigerator and put it on the stove to cook covered on low for about an hour.
Here is a breakdown of how much and what I used for those people
who prefer a recipe:
Chicken and Squash Dinner
4 pieces of chicken on the bone (thighs legs wings etc)
½ small yellow or green squash
½ medium onions sliced up
2 ears of corn broken in half
2 cubed potatoes
Fresh ground pepper and Sea salt to taste.
Italian dressing
Combine all the vegetables and chicken.
Pour Italian dressing over the vegetables and chicken (just enough
to coat the vegetables and the chicken. No need to drown them to marinate them)
Marinate overnight in large pot
Next day cover pot and allow cooking over a slow flame for about
one hour.
It’s then ready to serve. How much simpler can it get?
The good thing about the recipe is you can use whatever vegetable
you wish with the chicken.
What I put in it today are my favorites plus a couple left
over potatoes. Usually I don’t have potatoes in my chicken dinner but today I
did.
The unchanging part of this recipe is the chicken and the Italian
dressing the rest as I said is up to you.
I think if you give this meal a try it could become a favorite
meal very quickly that you will want to make over and over again this summer.
