Diet Friendly Scrambled Eggs & Ground Beef
Then I started thinking about all the diets that have come and gone over the years some that had great success with the public because they seemed too have worked and some that didn’t.
That was when my mind wandered back to the seventies when mom went on the Diet Workshop Diet that worked so well for her.
I knew I still had some of the recipe books and searched though my books until I found them and dragged them out to see what I use to make back then for her.
Some of the recipes I would never take the time to make again but others brought back good memories with my family and of course good food and were easy to make.
Today I am making one of those recipes that years after the diet was forgotten remained a family favorite.
It is a simple recipe that I still make today.
It originally consisted of ground beef scrambled eggs and onions and was a suggested diet breakfast.
It is a great breakfast that I have changed up from time to time and made into an omelet as well.
Today it will be the original recipe kicked up a notch since it will be for dinner.
Here is the recipe:
½ pound ground beef
2 eggs
½ onions diced
½ green peppers diced
1 tomato diced
Sea or Kosher salt to taste
Fresh ground pepper to taste
1 Tablespoon of Sour cream
*Brown the ground beef and vegetables.
Beat the eggs with a tablespoon of sour cream Salt and Pepper.
I only use fresh ground pepper that has black red green and white pepper in it. It makes a world of difference to the taste of this meal as far as I am concerned but then again I am totally addicted to pepper. It is one of my favorite spices.
Once the eggs are blended with the sour cream and the ground beef is browed and the vegetables are soft combine and scramble as if you are making scrambled eggs.
When I serve this dinner I always put salsa instead of ketchup on the table. Salsa is calorie friendly and does not have the sugar in it that ketchup does. Unless you make your own ketchup or spend a lot more money realize you are adding sugar to your meal if you choose ketchup instead of the salsa. That’s your choice of course but the salsa also adds a nice fresh touch that ketchup does not.
I will complete the meal with a couple of mini cornbread muffins that have vanilla and jalapeno peppers in them.
If you don’t have the cornbread muffins on hand or in your freezer as I do just get a dollar package of corn muffins from the Dollar Store or the Dollar General that only requires water in the mix chop up a couple of peppers and add a cap full of vanilla and make your own.
It is up to you if you add the cornbread muffins but it does complete the meal nicely. If you are watching your weight as I have started doing make mini muffins because of course there are fewer calories in the smaller muffins but you still get the satisfaction of the corn muffins that will taste so good with this meal. I add the peppers because hot peppers I have read in many diet books reeve up the metabolism and that of course helps burn the fat. I also add the peppers because the corn bread taste so good that way!
I will serve coffee with some Baileys’ Bristol Cream creamer in it for the beverage.
The dinner is complete all that will be left to do is enjoy it.
