Hash Eggs & Good Friends

Today I put away Christmas. You may think I am jumping the gun doing this the day after Christmas.
It’s not that I want the holidays to be over I am just excited about the beginning of the New Year. It is a ritual I have had my  whole life. It’s like a clean sweep when all of the clutter of the Christmas ordainment's and decorations are gone and I feel like I can breathe again. Everything is open and back to normal.
That’s what I was busy doing today.
 I also invited a friend to come over for homemade hash and eggs. It was going to be breakfast but turned into dinner. It was just as enjoyable later in the day as it would have been at the start of the day. It really didn’t matter when. It mattered who. A good friend is always welcome in my home any time.
Yesterday as I said in my Christmas article I fixed a Pork Roast with roasted potatoes. When I took the roast and potatoes from the oven yesterday I set aside a cup of Pork and a cup of potatoes in anticipation of what I making today.
 The pork hash was easy to make. It was just chopped pork potatoes green peppers and onion and a table spoon of herbed butter from yesterday’s meal added for flavor and cooked up in a frying pan while the poached eggs cooked in a pan of water and vinegar next to it. The biscuits were heating in the oven and the coffee brewing.  Earlier I had peeled and sliced up some clementine’s   that needed to be eaten before they got too old and they made a nice side dish to this dinner. All was ready in just a few minutes.
 I didn’t have to buy anything extra because everything I needed was on hand. I always have onions and the pepper was in the freezer. At the end of the summer season I had bought a bunch of green and red peppers that were marked down at the open air stand in my area to put them away for the winter. I used one of those peppers for the hash today.
For dinner I served the hash with biscuits (left over from yesterday’s meal) sugar free jam poached eggs clementines and coffee. It made a wonderful dinner that didn’t even cost a dollar to make after all this was mostly made from leftovers. My friend brought a can of whip cream to use in our coffee. It was a nice treat that we both enjoyed. The dining table was over flowing with good things to eat and was an impressive site.  It looked like I took a lot of time to make this dinner and spent a fortune on all the home made goodies. We all know neither of these things are true but it’s always nice to make a good impression and make your friends feel special
My friend asked me if I would be including her in this article I was planning on writing tonight since she said she loved the dinner.
I said of course and so there you have it she is included and yes she ate every bit of her dinner and walked away feeling full and happy.
I enjoy entertaining my friends and cooking for them. I know I have to do it on a budget and make my dollar stretch as far as it can. Holidays are always a good time to do just that.
Besides the second meal that we had today I have enough left over potatoes to freeze for another meal and had enough pork for a sandwich today for lunch.
