Lasagna From Leftovers


                                       

I love the holiday! So many leftovers. 
Tonight I am making lasagna
from mostly leftovers. I went to the dollar store and bought lasagna noodles and a bag of meatballs. Total spent two dollars.
I came home and got out the left over spaghetti sauce meatballs and left over cottage cheese and ricotta cheese out of the refrigerator.
 Ok I was ready to make my lasagna.
I cooked up half the box of noodles and browned up two hamburger patties from the frozen patties in my freezer. I then chopped up the leftover meatballs while the noodles and the two patties cooked. I mixed together the cottage cheese and ricotta cheese flavoring it with Italian seasoning from my pantry (another dollar store item I bought in the fall) then I added fresh ground pepper ( I will confess that the pepper is not cheap. It’s my food passion and I order from a specialty store twice a year for 4.00 a pound and share half of it with my best friend who also has a passion for fresh ground pepper) salt and  a little bit of half and half. Once the noodles were cooked I started the assemble it in a square cake pan. Let’s face it that is big enough for one person and there will be at least two or three double servings of lasagna  to freeze and put away for another day once dinner is done. After everything is assembled I top it off with cheese to seal in all the great flavors. Then I put it in the over for forty five minutes. I will not tell you the tempature because my oven is not depenable and I have to bake at 400 degrees or higher to make it work. I have had four fires with this stove this year! Anyone have a free stove? lol
It smells so good in here while it is bubbling away in the oven teasing me and making me hungry.
I may add a small toss salad on the side. This is a ninety nine salad from Aldies that has already been accounted for last week price wise so that adds nothing to the cost of this dinner. 
Now I will relax while everything cooks.
I am a bit tired. I got my new nine piece comforter set in the mail today and I changed out the bed. It was a lot of work but it looks great! Did I mention that the bedding cost me fifteen dollars on Ebay? Yeah I am thrifty even with bedding! I guess its true when your cheap your cheap!

sound good make some for yourself. Remember all you have to dp is assemble the noodles (any kind of noodle it does not have the be lasagna noodles) sauce and the rest is up to you. Make it veggies and sauce make it turkey and sauce whatever you want make it your way and enjoy!
