Leftovers there I said it! I know to some of you that is a dirty word!
Honestly if you approach the idea of using leftovers in the right way it will become one of your favorite words that will make your stomach growl and your pockets happy.
I think the thing that makes leftovers a dirty word is what we do with them. I don’t like leftovers either when if I keep reheating what I had for dinner over and over again and just drying out what was so tasty the night before. I don’t want the same thing two days in a roll unless its pizza for breakfast of course. Oops should not have confessed that one right? Oh heck I know you do the same thing!
Instead we have to (yes I am going to say it again) think outside of the box and make something delicious for dinner that you can look forward to eating when you are ready to use the leftovers again. In fact don’t just think of them as leftovers instead also think of them as ingredients to be used in a different meal instead. Don’t use them the very next day. Wait a couple of days then decide what you will make with those leftover ingredients. Don’t worry most of the time the leftovers will not spoil in just a day or two and if you still have not been inspired by that time then freeze the leftovers until you are ready to use them again.
Remember leftovers are food that was good when you made dinner and enjoyed it and it will be good when you use them again for a different meal or perhaps in the same meal that you enjoyed enough to save.
Last night’s dinner that I made and I wrote about was a good example. I had left over ingredients from a couple of dinners that I had made a few nights before and combined them and used them to make lasagna for dinner. Now who can dislike lasagna?
I had several pieces of lasagna left over when dinner was finished and cut them into dinner size pieces and froze them to be pulled out and enjoy another day when I am in the mood for lasagna . When I am ready to have lasagna again I will pull one of the packages out of the freezer then I will add some fresh sauce and cheese and heat it up in the oven. It will taste just as good the second time around as it did the first time. Just by adding some fresh ingredients it will make the lasagna taste freshly made again.
Remember don’t treat leftovers as food to be used up and reheated over and over until it is gone. They are meals that have ingredients you enjoyed so make the most of them and enjoy them again when you are ready. The best part of all this outside of the great food is that the meal is almost free! You have already accounted for the cost of the meal the first time around and a little freshening up will make the pennies this little bit of ingredients cost that you are adding not worth mentioning! Think of it as a free meal of your favorite food at a top rated diner called your home.
Leftovers are not garbage they are food you have enjoyed so think of them
in the right way and you will always be glad when they are in your fridge or freezer instead of dreading their existence and throwing them out.
