Meatless Saturday
 

This is going to be what I call a meatless Saturday for lack of a better term.
 Every few days I prefer not to have any meat chicken or fish. Dairy products are an exception on this meatless day.
I believe the body and especially the colon needs to rest from the digestion of these foods and a vegetarian style dinner I believe helps provide that needed rest.
Today is one of those days. I have decided to make Scalloped Corn.
I would not call this a quick dinner to prepare because there are lots of ingredients in this dish and it will take about ten minutes to prepare instead of my usual five.
I was able to cut down the time to ten minutes by using my blender to mix all the ingredients together.
The good part is I had most of the ingredients  in my pantry and refrigerator and there was not one expensive ingredient in the recipe.
It usually bakes in the oven for thirty minutes at 350. I have an oven that is dying so my oven will be set at four hundred so it has a chance of baking. It will take my scalloped corn more than the thirty minutes. But if you have a decent oven then the 350 for thirty minutes or until set will be fine.
 Here is the recipe I used if you’re interested.


GRANDMA'S SCALLOPED CORN 
1 17-oz can cream style corn
2 eggs
1/2 cup soda crackers crushed
1 Tbsp. chopped celery
2 tsp. chopped onion
6 drops Tabasco sauce
1 tsp. sugar
1/2 tsp. salt
1/2 cup shredded cheddar cheese (optional)
Paprika
1/4 cup each: melted butter
evaporated milk
shredded carrot
chopped green pepper
Combine all ingredients except cheese and turn into greased 8 x 8 x 2 baking dish. Top with cheese and paprika. Bake at 350 degrees for 30 minutes or until set.

If you don’t have all of these ingredients don’t worry about it what you need to put in the scalloped corn is not written in stone. For example I did not have creamed style corn. I know cream corn is just basically the whole kernel of the corn pureed releasing the liquid content of the corn what I call the cream of the corn itself so I processed a small can of corn and then added a second one of whole corn. It worked out fine. (No I am not a foodologist I wanted to give my cats a treat one day and they love creamed corn. So I looked up how to make it sense I didn’t have a can of cream corn on hand).

I will add corn muffins with jalapeno peppers and perhaps a side salad if I am really hungry to complete the meal for this evening.
I had the corn muffins in the freezer. I made them for another meal last week and froze the left over muffins to use at a later time.
 This is delicious and filling meal but if time is an issue for you and you would like to try making scalloped corn then it is perhaps better to prepare this meal on the weekends or when you have more time.
