Meatloaf With Matzos Crackers
Yes this is the dinner I made today.



I decided today to make a meatloaf.
As I have said before I don’t like bread in anything. So that makes making something like meatloaf a little more difficult and a definite challenge.
Earlier this year I made a meatloaf with potatoes. It was fine but too mushy and too many calories. I wanted something more like the real thing that would hold its shape and be a little healthier and lower in calories.
So off to the pantry I went looking for an inspiration. I could not help but see my stack of Matzo crackers when I opened the pantry door.
I had to admit I have a lot of boxes of Matzo Crackers. I said to myself I wonder if that would work? It would give me something to use a couple of crackers in besides just eating the crackers for lunch or snacks. That idea appealed to me so I decided to do a little research and see if anyone had made meatloaf from these crackers. I could not find any recipes out of these crackers but did find recipes using left over matzo meal.
I thought about it and I know that sometimes people do use crackers instead of bread  but regular crackers have too many of the same ingredients as bread and I know from past experience it does not work for me taste wise because of that fact.
But Matzo crackers are made from wheat flour and water nothing else.
They are very low in calories and are a healthy choice over all. The  best part of all for me is there would be no bread or  bread type products like saltines in my meatloaf so why not give it a try?
I was pretty certain it would work and decided all I had to do have it turn out right was to get the amount of ingredients in this meatloaf correct.
First I ground up one cracker but that was not enough so I added a second cracker and that was perfect. Then added Italian spices ground pepper and sea salt to the crackers and ground it all together I then took out about a half a pound of ground beef and added the crackers and seasoning to it and then I broke an egg into the mixture and carefully blended it all together.
When I was done and the meatloaf was mixed.  I put the meat loaf in a pie pan and topped it with salsa. (Please Please don’t over mix! Any ground beef loses flavor when you over mix and compress the meat!)
I had already preheated the oven to 375 degrees. And was about to put the meatloaf in the oven when I decided to add some roasted potatoes I cut up three potatoes that were unpeeled and put them in a sandwich bag. I put them in the microwave in the sealed sandwich bag for three minutes. That was just to soften the potatoes a little before putting them in the oven with the meatloaf. (The meatloaf is not baked long enough to cook roasted potatoes all away though)
Then I tossed the potatoes with a half teaspoon of butter and Italian seasoning and put them in pie tin surrounding the meatloaf. This is when I use bread with meatloaf. I put it under the potatoes  to soak up the grease. When the meatloaf and potatoes come out of the oven throw out the bread it will be filled with  grease instead of your dinner.
 I have to admit I was getting hungry just smelling the meatloaf baking because it smelled so good!
Needless to say I had to taste it when it came out!of the oven and  I was not disappointed it was outrageously delicious! The matzos had allowed all the flavors to blend and had a wonderful taste to it. It needed nothing but a plate and fork to enjoy! The potatoes were crisp and will not require any additional butter. I know that of course because I had to taste them as well.  I think later for dinner I am going put open a can of green beans to go with my meatloaf and potatoes. (I have frozen green beans I put away this year but I like canned green beans better)
You add whatever vegetable or salad you wish.
 What I know for sure is I will enjoy this entire meal for dinner tonight if I can wait that long!
Remember this not completely about me its about you as well. It is about our health and making better choices and still getting the most from what you are making to eat on this budget.

 I will try to never to compromise that ethic.
I know it would not work for you if I do and I defiantly know it will not work for me.

Below I have written out the dinner in recipe form to make it easy to follow.

Matzo Meatloaf is made from Passover matzos, crackers
Total Time: 40 minutes if making the potatoes 30 to 35 if not
Preheat oven to 375 degrees
Ingredients:
2 matzos crackers
1 egg, beaten
1 teas of Italian seasoning
Salt and pepper to taste
1//2 lb. ground beef
Salsa
+++grind the crackers and then add seasoning to the crackers add crackers to the ground beef and then add one egg.
Mold and place in pie tin. Top with salsa.

Roasted Potatoes

Three potatoes cut in quarters
Place in sandwich bag sealed and then place in microwave for three mins
Toss with ½ teas of butter and Italian seasonings and then place in pie tin around the meatloaf.
Be sure to put pieces of bread under the potatoes to sop up the grease so it goes in the bread and not your food.
That’s it that’s all there is too it!
