National Leftover Day

I am sitting here full and happy watching the Rose Parade.
It was a busy day so far so I am happy I recorded the parade to watch when I had time. 
Today I think I will rename National Leftover  Day.
We all have so much left in the fridge from the holidays. I know if this little one person household does  so you probably do as well. 
Of course we don't want to waste all the good food still waiting to be eaten. That means it's time to look at what is in  the fridge  and make some meals for the days ahead .
Lunch for me today was left over fresh pea soup and the other half of my grilled cheese and ham sandwich.  That takes care of the balance of the leftovers that I had waiting to be used up.
Because last night I took out the rest of the left over lasagna and stuffed pizza from the fridge and scraped out the filling from both into a bowl to make up a meal for today. 
I  cooked up a few lasagna noodles and while the noodles were cooking I added some cream to the scrapings and made a thinner filling that I would use later when the noodles were done. Also while the noodles were cooking I made a white sauce flavored with garlic and capers for a sauce to put over the roll-ups.
When the noodles were done I dried them off and spread the left over filling on them and rolled the noodles up like a pinwheel or jelly roll then poured the sauce over the noodles.
That will be dinner tonight.
Today after I  used up the soup and sandwich I could finally see what was in the fridge and I was able to made a list of what I needed to replace.
The next thing I will clean out is the freezer and see what needs to be used up and make a list of what I need to replace in the freezer as well.
It feels a lot like putting away Christmas decorations after Christmas Things are no longer crowed and it creates a feeling of a fresh  start for the New Year.
It’s time to get back to the Rose Parade.
