Necessity Is The Mother Of Invention When You Don’t Have Bread.
Ok I admit this was a blatant play on words! I am both out of bread and I am broke and I don’t want to use my last dollar to buy bread.
That being said I had to come up with something to use for sandwiches.
I started looking though my pantry and found a new box of Bisquick. That was a good start. Then I spotted a large can of sweet potatoes.
I am not a big fan of canned vegetables and didn’t know when or if I would ever use this can of sweet potatoes.
I am also not wasteful and the idea or throwing out this can of perfectly good sweet potatoes did not set well with me so I decided that I would find a way to combine my two pantry finds. In my search I found a recipe for Sweet Potato Biscuits on the Bisquick web site.
I told myself why not give this recipe a try?
I reasoned that sweet potatoes goes with most meats and tonight I am making ground turkey burgers on the grill.
What an excellent combination I said to myself and with that though the decision was made and I made these biscuits.
Here is the recipe for these sweet potato biscuits and the changes I had to make to get them to turn out right.
Sweet Potato Biscuits
2 1/2
Cups Original Bisquick® mix
1/3
Cup butter or margarine, softened
1
Cup mashed cooked sweet potato
1/2
Cup milk
1-Heat oven to 450°F. Stir all ingredients until soft dough forms.
2-Place dough on surface sprinkled with Bisquick mix; roll in Bisquick mix to coat. Shape into a ball; knead 3 or 4 times. Roll 1/2 inch thick. Cut with 2 1/2-inch round cutter dipped in Bisquick mix. Place with edges touching on ungreased cookie sheet.
3-Bake 10 to 12 minutes or until golden brown. Serve
Expert Tips
Here’s a tip for making nicely shaped biscuits. Push the cutter straight down through the biscuit dough without twisting it. If you twist as you cut, the biscuits may be uneven.
Biscuits don’t have to be round! You can use a 2-inch cookie cutter in any shape. Or cut the dough into smaller squares, rectangles or triangles with a sharp knife that has been dipped in Bisquick mix to prevent sticking.
I found that if you make huge biscuits that are big enough for a burger (hamburger roll size) it will take a good 25 mins to bake these biscuits all the way through.
Also play it by ear but make sure you add extra Bisquick if the dough is too wet and does not form a ball.
I also brushed the top with butter.
These are the only changes I made to this recipe.
These biscuits turned out great. I will share them tonight with my neighbor when we cook outside on my grill and save a few for my best friend to try.
I will still have enough biscuits left to see me though this week and next because I doubled the recipe this recipe made up 18 huge biscuits!
Now that is really getting a good bang for the buck!
Give them a try you might like them and for me they saved me from using the last of my money on bread.
