A Quick Dinner Of Stir Fried Pork
Tonight I didn't know what I was going to make for dinner. I was very busy with this blog and other things and by the time it came to make dinner I just didn't have a clue what I was going to make or if I even wanted to make anything.
So while I was feeding the cats I looked in the refrigerator to see if I could get some inspiration for dinner. There sat a small piece of boneless ribs that I had paid well under a dollar for. You know the kind of package I am talking about. The kind you see in the grocery store meat case and it’s so small you ask yourself what the devil you would do with a package of meat that small.
I always pick up these packages because they are always marked down and fresh besides I have lots of ways to make these small packages of meat do for a meal.
I took the package out of the refrigerator and then decided what I would make.
I grabbed a frying pan and put it on the stove with the heat on high for a couple of minutes to get the pan hot and spayed the pan with olive oil so the pan was sizzling.
Then I cut up the pork and pour some Wondra flour on the cutting board and sprinkled the flour with some soul

I placed the pork in the pan and sprayed the top of the meat with olive oil now both sides of the pork were treated with the oil without being oily.
While I let the first side of the pork brown I chopped up about an eighth of an onion and one small banana pepper and a small handful of walnuts. Once I turned the meat on the other side I added the veggies and nuts then let it cook while I fed the cats for another couple of minutes.
Before I took the dinner out of the pan I stirred in a tablespoon of natural marmalade I would have used pineapple but didn't have any and as I always say thing outside the box and use what you have and that is what I did. Then I blended the pork with the vegetables and nuts and marmalade together it was ready to serve.
I put the pork nuts and veggies on the plate and put some applesauce next to it to complete the meal.
My meal turned out to be very tasty and filling.
I guess the point I am making tonight is you don't have to have a lot of meat to make a full dinner that is filling and satisfying. We need to get out of that old American mindset that meat has to be the biggest portion on the plate. I believe as the Chinese do that meat is only part of the meal and does not have to be the star just a player in the dinner performance that you will enjoy.
