Have you ever walked into a house and it smelled and the smell made your mouth water?
I know it sounds strange but if you were raised in a German or Irish home as I was then  what you were smelling would make your mouth water if its Pork and Cabbage bubbling away in the crock pot!
In case you haven’t guessed that is what I am having for dinner tonight.
It was not planned or even a though it was an accident.
Last night I went into the freezer to decide what to take out for today’s dinner when I discovered that the foil on the baby back spare ribs had been pushed aside and the edge of the ribs were exposed and frozen looking. I was pretty sure that these ribs were not like that the day before but I was not going to take a chance and just rewrap them again and hope that they were not freezer burned. Once something is freezer burned the food just gets worse and worse until you cannot use it and you have to throw it out. I was not taking that chance so I took them out to defrost. When they were defrosted this morning they were fine. I trimmed the edges to be on the safe side because I don’t want that freezer burn taste in my dinner.
So today I pulled  out my crock pot and cut up the half a head of cabbage  I have in the refrigerator from the last time I made pork and cabbage then I added one baby back rib since the ribs are huge that’s all I needed. Then I also added some water bouillon a couple of potatoes and carrots to boil and bubble slowly all day in the crock pot.
My house will smell so good and so smelly just the way I like it!
Then there was one rib left over to use. I put that in the oven rubbed with salt and pepper and basted it with a little pancake syrup. Not much syrup don’t make that mistake use just a little so it will be a nice undertone to the BBQ sauce that you will put on the pork after you have removed it from the bone and shredded it.
I will put the BBQ pork in a container mark it and put it away for another day.
Mistakes happen as it did with the pork. Making the most of what happens makes a happy mistake that works for you.
I know for sure I will enjoy this boiled dinner later even though I had not planned it and it was a mistake my stomach will be very happy that this mistake happened!
