Today is leftover turkey day.
The best thing about buying turkey on the bone is that there is a variety of things you can do with a piece of poultry like this.
The challenge is to see how far you can stretch your dollar by buying the right cuts of meat and poultry like I did with this turkey on the bone. You will be able to get several meals from just this one purchase.
So far I have been able to put away two turkey roasts for future meals and I have made four turkey and gravy dinners.
Now I have a little bit of turkey and some peas left over from the week as well as the carcass so it’s time to make turkey soup. It is also time to clean out the refrigerator of veggies that need to be used up.
I put the carcass in boiling filtered water and added the rest of the turkey that I had in a separate bag for lunches or other meals.
Then I found some baby carrots that needed to be used up and the last few potatoes and an onion that needed to be used up well. I cut all this up and added it to the turkey and water. Next I took out a peeled tomato and pepper I had in the freezer and chopped that up and added that as well.
I will let all this cook slowly on the stove until the soup is ready. That should take a couple of hours. I let it cook this long to make sure all the turkey will come off the bone and go into the soup and I will get maximum flavor.
When the soup is done I will strain the soup so all I have is broth in the pan.
The veggies that will be filtered out will be separated from the turkey and set aside.
The turkey that is usable will be chopped up and also put aside and cooled. I will also let the broth cool down then I will pour broth into several foam cups to be used for other meals and then frozen.
Next I will add noodles and some turkey to the broth that remains so that I will have some soup to enjoy later.
Next I will add the leftover turkey and canned vegetables from the week to the veggies and divide into a few different bags and mark it for future use to make pot pie and then freeze them.
Now remember I have already had four meals from this turkey and frozen two turkey roasts before putting away the cups of broth and the fixings for pot pie.
We are up to about ten meals and all this is out of a five pound turkey breast that cost me under seven dollars!
As you can see I did buy the right poultry to make my dollar stretch plus tonight or tomorrow when it’s raw and rainy I will have some great soup to enjoy.
