Tuna-Cannellini
Bean Salad
I have been looking for several
different recipes that include several things I want to accomplish as far as
food is concerned this summer and I found a lot of the ideas I needed wrapped
up in this recipe.
The first part of this
search began when my next door neighbor gave me a can of cannellini. I will be
honest I have never used this bean before
and I had been looking for different recipes that I might be able to
use these beans in and as luck would have it this recipe calls for them. If you have no clue
what this bean is and would prefer a substituted use chic peas.
Next I wanted to find an
inspiration for different kinds of salads that would not be boring and of
course easy to make and this one fits that bill. Side benefit is that its also healthy!
I also wanted to find
something light for dinner because a friend told me people tend not to be as
hungry during warm weather. Who would have figured? That’s not me of course I
am always hungry so I will include a roll with my salad!
The last part and
important to me is I wanted to find recipes that would include what I am
growing in my vegetable garden this year and you guessed it this one does.
Needless to say a happy
camper.
Here is the recipe and
yes I have changed it up a little to fit with our ability to keep eating on a budget.
Tuna-Cannellini Bean Salad
INGREDIENTS
2 tablespoons chopped onion
1 tablespoon parsley flakes
1 medium stalk celery, thinly
sliced
1 small clove garlic, crushed
1 can cannellini (white kidney) beans,
drained, rinsed or Chic Peas
1 can water-packed tuna, drained,
broken into chunks
1/4 cup chopped seeded tomato
¼ cup balsamic vinaigrette dressing
2
leaves leaf lettuce
In large bowl, toss onion, parsley, celery,
garlic, beans, tuna and tomato. Add vinaigrette; toss gently to coat.
Place 1 lettuce leaf on each serving plate;
spoon salad onto lettuce. Serve with garlic dinner rolls.
Try a flavored vinaigrette, such citrus
or raspberry, for a different way to enjoy this salad I am using strawberry vinaigrette salad dressing.
Now come on admit it. This is easy! It
should be delicious as well so enjoy!
