A Twist on Meatloaf The Original Comfort Food
(no bread using potatoes instead)
I always wanted to enjoy meatloaf like everyone else but the use of any bread product in this comfort food always stops me from enjoying it.
Whenever I said this to a friend or family member they would inevitable say that I would love their version of meatloaf. No I won’t I don’t care how you make it I would say as kindly as possible.
I try to explain it’s not that they are a bad cook it’s that I don’t like anything with bread or bread products in any food including meatloaf.
Today I decided to address this problem and not feel left out anymore. I figured it was time to have another comfort food besides cottage cheese. I found a solution to making meatloaf without bread crumbs or bread after searching on line for something that appealed to my pallet.
I found a recipe for Meatloaf made with potatoes instead of bread crumbs.
That intrigued me so I looked up a few more recipes and decide to put one together myself.
Here is what I came up with:
Preheat a convection oven to 350 degrees
In a regular over preheat to 375 degrees.
In a bowl combine:
½ pound of ground beef or meatloaf mix
1 Potato
½ medium onion
2 tablespoons of dry onion soup mix
A squirt of mustard (that’s about a tablespoon full)
Salt and pepper to taste
I grated the potato and the onion into the meat then added the rest of the ingredients and mixed it all together gently so I would not over work the meat and make it come out dry.
I placed the mixture on a pan and shaped it in an oval shape and topped with ketchup.
Next I cut two potatoes into quarters to roast with the meatloaf.
I set the potatoes on top of bread that I placed around the meatloaf to soak up any grease from the meatloaf so the meatloaf would not be sitting in the grease as it cooked.
I baked the meatloaf and potatoes for one hour.
Then let it setup for fifteen minutes after I removed it from the oven so the meat would firm up and the flavors would go back into the meat.
While I waited for the meatloaf to be ready I put the potatoes into a bowl and topped them with a tablespoon of butter and some Italian seasoning and placed in the microwave for one minute then tossed together when the butter was melted.
I served the potatoes and meatloaf along with some corn.
The new meatloaf was great! I will make it again whenever I need some comfort food.
But next time I will make it a double header and make the side dish cottage cheese my original comfort food!
