Blueberry Pancakes Not Just For Breakfast

Yes these are my blueberry pancakes
I think whenever I can
fit blueberry pancakes into the menu it’s a good thing since I refuse to pay
the high prices that a restaurant charges for them.
You would think it was a
difficult and an expensive thing for a restaurant to make but blueberry pancakes are simple to
make and inexpensive as well plus of course always good to eat.
` Thursday’s Price Chopper
puts a list of items on special sale for the weekend ahead and the items
offered are always good values if you can use what is offered.
Last week was a great
week for their ads as far as I was concerned because I could use everything
they offered! As a friend likes to say winning!
Everything they had on
sale was only eighty eight cents and that included butter along as with the
blueberries and I also found an unadvertised sale of a dollar for a dozen large
eggs. That’s when the idea of blueberry pancakes came to mind and I decided
this week I would make them.
I brought home the
blueberries and made simple syrup for them of just a little sugar and water and
put the blueberries away until I was ready to use them. The syrup part is optional. If you prefer them with out any additional sweetener then wash the berries and store until they are ready to be used. This is up to your taste and what you prefer.
Today I decided I was in
the mood for blueberry pancakes.
These are simple to make
let me share how I did it because they turned out great and tasted wonderful
and best of all only took minutes to make!
Blueberry Pancakes
1 cup of
Bisquick
1 cup of
blueberries
½ cup of
milk
1 egg
1 large
frying pan sprayed with vegetable spray
*Pre heat
pan over medium heat
Whisk
together ingredients
Drop by
large serving spoon into pan
When
batter starts to bubble turn the pancakes
Remove
pancakes and make a second batch
The batter
will make six regular size pancakes.
Once the
pancakes are made place on a plate and cover with half of the cold blueberries
you have left,
Top with whip
cream
Today after I
made the blueberry pancakes and I was ready to eat them I have to be honest I did put a little syrup on the
pancakes before I put the berries and whip cream on top.
I don’t
like plain pancakes and the parts that are not covered with the cold berries
and whip cream are just plain and adding just a very little pancake syrup takes
care of that problem.
I also
made a couple of sausages to go with the pancakes.
I have a
lot of sausage patties because I bought them when they were ten boxes for ten dollars a
month or so ago.
This made
a wonderful brunch today but I have three
more pancakes for later in the week and the rest of the blueberries to
use so needless to say they will become a dinner in a couple of days!

you make your blueberry pancakes for breakfast, brunch or dinner these pancakes are always a
treat!
