Scalloped Tomatoes

                                              
Summer is here and so are the outdoor markets.
Saturday is farmer market day and if you love farmer markets you also have wondered what can I make with some of these vegetables?
I know a lot of them you didn’t have as a kid but some of them you did.
I want to start giving you some ideas for what to do with these vegetables.
Today let’s start easy with tomatoes and make scalloped tomato a gratin.
Here is how to make it:

Scalloped Tomatoes
½ lb of tomatoes diced
3 tbl of olive oil
1/2 of a baguette don’t worry use bread or Italian bread if you don’t have one.
½ table of garlic
½ tbl of sugar
½ tesp of salt
¼ cup of pepper
¼ cup of fresh basil
½ cup of parmesan cheese

First in a 12” pan put three tablespoons of olive oil
Then add the bread that you have cubed
Brown for about 5 minutes
Then add the tomatoes and cook for a couple of minutes
Next add the basil when you remove the pan from the heat.
Mix together and then put in an au gratin pan or pine tin
Top with parmesan cheese then drizzle with olive oil and put in an oven at 350 degrees
For 35 minutes until bubbly and brown.
It’s done and ready to serve as is or with a piece of ham or a pork chop and perhaps some fresh fruit.
Is this expensive? No you need so little to make this mean that it will be very cost friendly.
