Zucchini Pancakes
Another hot summer day and
another visit to the farm market or the farmers market.
Today let’s buy two zucchinis.
It will by far be the least expensive of all the summer vegetables because
there is always so much of it available right now.
Zucchini what do with
you do with all of it?
Its too hot to get complicated and it has to be easy and something good to eat.
Why not make something
everyone loves pancakes!
Here is one way to make
these pancakes:
Zucchini Pancakes
1/3 cup of Bisquick
1/8 cup of Parmesan
Cheese
Pepper to taste
2 eggs beaten
2 cups of shredded zucchini
½ cup of grated red
onion
2 tbsp of butter
Mix all dry ingredients.
Add eggs and mix.
Add zucchini and onion, folding ingredients together.
Melt butter in pan.
Cook in pan like potato pancakes turning when golden brown.
Serve with sour cream.
This would be great alone or serve with meatballs and perhaps some salsa
for dipping.
I but the meatballs either at the Dollar Tree if they are not on sale at
Price Chopper.
The salsa is always from the Dollar Tree I love their salsa!
Parmesan cheese of course can be bought fresh at Aldies or can be bought
in the dried version once again at the Dollar Tree.
You will get meal after meal from this dry Parmesan cheese and is well worth keeping
on hand.
This is delicious and a great summer meal!
I think you can see if you’re adding up the expense this is a very
affordable meal.
The best part is you have something else to make besides deep fried
zucchini.
