Fast & Easy Lemonade Pie


LEMONADE PIE

 
I have been working hard today doing a combination of fall cleaning and rearranging the entire house.
It was noon and I was hungry and as I prepared lunch I realized that I had the beginnings of a sweet tooth taking form.
I don’t usually have a sweet tooth so when I do have one I indulge it.
I think I am in the mood for pie today. That would take care of the sweet tooth nicely.
First I thought of pumpkin but it just does not seem like the right time of year for that particular pie besides I am tired so it also is way too much work to make.
I decided to do what I usually do when I need inspiration I forge though the refrigerator and freezer.
As usual my forging paid off because I found frozen lemonade and cool whip. That gave me an idea. I recalled a pie I use to make when my mom was alive and she loved it. I was pretty sure that the recipe called for evaporated milk so the next stop was the pantry to see if there was any on the baking shelf. Sure enough I got lucky again and found a can of condensed milk
I knew that was what I needed to make the pie I had in mind but I was not sure of the amounts of each of these things to use.
I looked in my cook books but found nothing then I did an internet search and found the recipe I was looking for. I have to say I was a little surprised to find it since it dated back a couple dozen of years.
 I was happy to see I was right about what went into this pie and that I had what I needed except for the grand cracker crust. I had forgotten about the grand cracker crust! I was not about to go out and get one so I decided instead of pie with a crust I would make a pie without one.
I know you’re not surprised that I decided to do that. After all I always tell you to think outside the box and use what you have and that applies to me as well.
I mixed up the ingredients, poured it into a pie pan and later I will have a nice a creamy lemon pie for dessert.
Yes of course I tasted it who wouldn’t? It tasted as good as I remembered and cannot wait until desert today. Lucky for me dinner is a simple it will be a ham steak and some strawberry apple sauce. No sense in having a big dinner when the main event is the pie!

Here is how to make it and I bet it brings back memories to many of you as well.

LEMON - AIDE PIE

1 (6 oz.) can frozen lemonade
1 (8 oz.) Cool Whip
1 can condensed milk
1 (9-inch) graham cracker crust
Blend lemonade, Cool Whip and condensed milk. 
Add  a little food coloring if you want it the color of lemons.
Pour into crust.
Top with Cool Whip and a few curls of lemon for garnish if you have a lemon.
 Chill until set.

Can you believe how simple making this pie is?
It’s also very affordable and so very good and rich!
