Its summer time and we have access to lots of fresh vegetables so this meal will be inexpensive to make. It’s also the time of year we are most body conscious and are often on a diet or watching our calories.
So for all my friends out there who want to enjoy pizza but you don’t like the fat and calories involve in that treat here is a recipe that just might fill the desire for pizza and keep the calories and fat content of the food low.
Today let’s make Zucchini Pizza. Here is all we have to do:


Zucchini Pizza

Ingredients

2 small zucchini
1/4 cup mozzarella
olive oil
1/2 tsp Crushed Garlic
sea salt & ground pepper to taste
1/4 tsp parsley or basil or both
2 small tomatoes
1/2 tsp bread crumbs 

Directions

Cut the zucchini in half lengthwise, Scoop out the center where the seeds are with a spoon.

Brush the surface with a mixture of crushed garlic, olive oil, salt and pepper

Arrange sliced tomatoes into the grooves, sprinkle with bread crumbs and bake in a 350 degree oven for about 30 minutes

Remove and place diced or shredded mozzarella in between the tomatoes, place them back in, but now under the broiler until golden and bubbling

Remove and Sprinkle with Parsley or basil or both! You will love this as a side dish OR a meal!

Consider a serving as both halves of one Zucchini not only filling but satisfying not to mention any guilt involved!
