Spinach Quiche
& Fire & Ice Tomatoes
It’s Sunday morning and very early. Its only six AM.
I woke up early when there was a sudden blackout. I know who wakes up
with a black out? Me that’s who. I am such a light sleeper that even the
chipping of a bird can wake me up so the
sudden change in the lighting or sounds of my home was bond to do just that.
Anyway I woke up and could not fall back to sleep and suddenly I had the
urge for a cup of coffee. I got out of bed and as my OCD dictates I did the
morning chores before heading to the kitchen for the long awaited cup of
coffee.
Now sitting here on the love seat drinking my coffee I started thinking
about the day ahead and what I might like to do.
For the first time in days my knee was feeling a little better . So I would be able to do a little
more and I would also make a better dinner for myself today.
I started going through my recipes to see what I wanted to prepare.
I came across spinach quiche. That sounded good since I love spinach. I
went to the pantry to make sure I had a can of spinach and I did. If you don't have canned spinach then you can use fresh or frozen. Bottom like is what ever spinach you use make sure its well drained in face once its drained put the spinach in a paper towel and ring it out to make sure as much water as possible is removed..
Next I decided to planthe salad to have with the quiche. I decided I would make
Fire and Ice Tomatoes.
My great aunt was best friends with the chef at this inn and she shared with
me some great recipes. One of which was Fire And Ice Tomatoes.
Here are the recipes for both the quiche and the salad.
First the quiche:
Spinach Quiche
1 Can of well drained spinach
4 beaten eggs
½ cup oil
1 cup chopped onion
½ teas garlic
½ cup parmesan cheese
1 cup bisquick
Mix all
ingredients.
Grease a pie plate
Bake for 30 minutes @ 425 degrees.
Now that we have the quiche in the oven let’s make the salad.
Fire and Ice Tomatoes
¾ cup vinegar
1 ½ tsp celery salt
1 ½ tsp mustard seed
½ tsp of sea salt
4 ½ tsp sugar
½ tsp red pepper
½ tsp black pepper
Combine in a pan and bring to a boil
Pour over
2 tomatoes (if you have company add more tomatoes you can use of to six
tomatoes with this dressing)
1 green pepper
1 red onion.
Chill
Cut up and add one cucumber with ready to serve.
You add the cucumber later to keep it from getting soggy.
I know there are some new spices in this recipe, and I know these are spices you most
likely don’t have. If you commit to making this salad you will need to purchase
these spices. This hot dressing is wonderful
and full of flavor, and most likely nothing you have ever made at home before and I am sure you will enjoy
this dressing.
I like the flavor of the dressing so much that I have also used this dressing it on my 1000 year old recipe for Venetian
Salad because it’s that good.
You can buy these spices either at the dollar store or at Gabriel’s
market. What most people don’t know about Gabriel’s is that it may be a boutique
style grocery store but some prices cannot be beat and one of the things you
can get at a good price there are herbs and spices.
This will be dinner today for me and no it does not take a lot of time
to make. and is very affordable.
The side benefit of making this salad will be that once you own these spices there will be so many more recipes you can make and enjoy.
