When you can't cook what do you do? In recent days I have been facing that because of the injury to my hip from a fall a year or so ago.
I fractured the interior bone that could not be set and does not heal and when it starts hurting really badly I can not stand up for long periods of time.
I need the hip replaced but that's not happening at least not right now. So I have to take some smart short cuts when it comes to dinner if i want to eat well.
I realized people find themselves in this situation quite often weather it's from infirmity or they are just too busy or tied to cook at the end of a busy day.
I don't mind the occasional TV dinner but it's not what I want to do for more than a day or two.
If you look at a TV dinner it does give you some good ideas of what you can make for dinner in a very short span of time, and I have posted some of these quick dinners for you but my situation is worse than that right now since can not stand for even five minutes in front of the stove.
Last night I started taking action. I got out my Uncle Ben's Instant Brown Rice and made up a big batch of rice because that takes no time at all to do.
I just poured a cup of rice and a cup and a half of water into a casserole dish along with a half of package of onion soup.Then I put it in the microwave for five minutes and I had a flavored rice that would be good for dinner on its own or with other side dishes. I then did the same thing using Chicken broth and now had two different kinds of rice that would be a good base for any meal. That accomplished I needed to make a plan of what I was going to buy from the grocery store that would get me though the next week while I am going though the painful period of time.
I checked the ads for the various grocery stores and found that ham was on sale for $3.99 a pound this week and that is a great price because I can
get four ham steaks out of that pound of ham and have it cut to the thickness I want because the ham is from the deli.
Next while I am at the deli I will also picked up a half a pound of roast beef.
Then I will go over to the frozen food cases and buy the Perdue already cooked chicken strips and while there pick up a pound of hot dogs.
Then to complete my dinners I also bought some ready made jello and cottage cheese from the dairy area and a bag of salad from the produce. I have everything else I might need on hand to make these meals at home and if I stuck to this game plan I could be out of the grocery store in ten minutes.
This morning I went shopping for what I needed with my neighbor just in case I needed her to help me with something.
I got though the store on my own and didn't need to ask for help but I was in pain and very tired when we were done but I was also very satisfied that I would have what I needed for several days of quick meals that are home made and not in a frozen TV dinner format.
This is what is planned for dinner for the next few nights.
Dinner 1
Onion Soup flavored rice with about a quarter of the roast beef chopped up and added to the rice.
I heat this up in the microwave for three minutes and slice a tomato and add some cottage cheese to make the dinner completed.
Dinner 2
Chicken flavored rice
I add three pieces of the already cooked chicken strips to the rice and reheat for three minutes. I add the side of my choice and dinner is ready.
Dinner 3
The ready made salad I top with some blue cheese dressing
On top of the blue cheese dressing I will add the balance of the roast beef
Dinner 4
Hot dogs cooked in the microwave and served with a side of cottage cheese and onions and jello.
Dinner 5
Ham Steak topped with a little orange marmalade. I will either put this in the microwave or out on my grill. The weather and how I feel will determine that.
Apple sauce
I think by now you have the idea how it is possible to make few great meals in three minutes or less if you think it out just a little before you go shopping.
Bottom line don't cheat yourself. You deserve to have homemade meals instead of frozen dinners especially since it takes so little time.
Always enjoy your dinners like you enjoy your life your worth it.
