A Perfect Fall Dinner!
What a perfect early
fall day! I had slept in enjoying the sensation of the cool fall breezes coming
in the windows as I snuggled under the covers.
Soon the day began first
the dog in the back began barking then a friend called. It was time to get up
weather I liked it or not. As I talked to her I did my early morning chores as
a fresh pot of coffee was brewing in the kitchen.
As soon and I opened the
front door for the day to let the sun in my neighbor was standing there ready
to share her events of the morning.
I told her I would be out
to join her in a few minutes as she settled down at my picnic table on my big
front porch to wait for me. I finished my conversation with my friend and the
last of the chores then poured myself some coffee and went out to join her.
The sun was bright and
the breeze cool. I think I must be half cat because I love sitting in the sun
and feeling the warmth on my skin as the cool fall breezes washed over me.
There was no mistaking this
was going to be a fall day.
As I listened to what my
neighbor was telling me I began to think of what I was going to make for
dinner. I decided it would be a tribute to the beginning of fall.
I had found the perfect
recipe about a week ago but had not planned on making it for a while because it
called for dried cranberries which can be expensive.
Then I had gotten lucky
and found a sale at Dollar General. There usually price on the dried
cranberries was two dollars and fifty cents a package but they had been marked
down in half and then just that day they had been marked in half again. I
checked the expiration date and all was good so I picked them up to use in the recipe
I am making today and to use in my wine cookies I would make for Christmas
Today I would put half
of that package of dried cranberries to use.
First though I had to
make sure I had all the rest of the things I needed to make this dinner.
I did because everything
needed was pretty basic and I did have it on hand.
Let me share this recipe
with you I think you will like it.
Slow
Cooker Pork Chops with Apple Chutney
Ingredients
4 center-cut bone-in pork
loin chops, 1 inch thick (about 2 lb), trimmed of fat
1/4 teaspoon salt
1/4 teaspoon pepper
6 tablespoons packed brown
sugar
2 tablespoons cider vinegar
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1/4 teaspoon ground red
pepper (cayenne)
1/4 cup sweetened dried
cranberries
2 medium baking apples,
peeled, chopped (2 cups)
Later I will add some baby carrots and
enjoy a rich and favorable meal.
It took me about five minutes to assemble
and put everything in the crock pot.
I made the full recipe as far as the
chutney was concerned so perhaps I can freeze some of it for later use.
I did not cook as much of the pork as was
suggested in the recipe.
I used what I had and that was three
spareribs.
The other change I made was I had one huge
apple and cut that up. I did have a second apple but I didn’t want to use it
because there would be too much apple to put in the crook pot and I didn’t want
to waste the rest of the apple so I would wait until later.
I may make some scones later and I could
add some more apple at that time but if I don’t I will add some apple sauce if
I think it’s needed thinking outside the box as usual.
I also did not peel the apples. The peel
has the nutrition and flavor and after cooking for hours will just become part
of the texture of the chutney.
Until later think about making this dinner
as a tribute to the beginning of fall as I did.
Meanwhile I am off to the paint store with
my neighbor so she can get what she needs to paint her bathroom
I will let you know in an update here what
I think of this meal but I cannot think for the life of me why I would not
enjoy it.
Whatever you do think outside the box and
eat well you deserve it.
