Deconstructed Glumpk

Deconstructed Glumpk

Yesterday I was a little busy cleaning up the yard after the storm and writing a poem to a friend. That left me no time to write an article for this site, but there was enough time to make a good dinner.
I decided on a crock pot dinner that I had learned how to make when I was living in Rochester, NY several years ago.
My next door neighbors were Polish and had immigrated to the US and had bought the house next to where I was living.
We became friends as well as neighbors and I learned many things about their culture that they shared with me including this dinner which was one of their favorites.
They had updated how to make this meal from a traditional Polish meal to a modern version made in a crock pot and they taught me how to make it.
I call it a deconstructed Galumpk or cabbage rolls. You don’t have to know me ten minutes when discussing food to know that I don’t like any stuffed food.
So perhaps my friends taught me this version instead of the traditional one so I could enjoy the Galumpk my way.
I don’t know but I do know it became a favorite with my family.
Here is how to make it:

Deconstructed Glumpk

·        ½ head cabbage, about 4 pounds
·        ½  large onion, chopped
·        1  tablespoon butter
·        ½  pound ground beef (more traditional is to add ½ pork ½    ground beef)
·         1/2 cups cooked rice
·        ½  teaspoon finely chopped garlic
·        ½  teaspoon salt
·        ¼   teaspoon black pepper
·        ¼ teaspoon of ginger (I added the ginger part. Mom liked ginger with spaghetti sauce)
·        ½  cup beef stock
·        8 oz can of tomato sauce or 6 oz can of paste
·        Sour cream for garnish (optional)

Directions

Brown ground beef (this is a choice my friend just added it raw to the crock pot)
Chop up the cabbage and onions and add spices. Sauce and beef stock to the crock pot.
Cook for about 4 hours.
Serve over rice and top with a dollop of sour cream if desired.

This is a filling and satisfying meal that is a great one to make in the fall and winter months to come.
It’s also a great meal on a busy day.
Give it a try and I believe you will enjoy it!
