Impossible
Muffin Pies
Today was a nice cool
day. In fact it’s the first day since early spring that I needed socks to keep
my feet warm. So it was a good day to use the oven and I had an abundance of
ingredients to try some of the things I had wanted to try with old reliable Bisquick.
There had been a recipe
I wanted to use parts of to make a Bisquick style quiche.
Bisquick calls it
impossible pie so that is how I will refer to them as well.
First thing I did was
heat the oven to 400 degrees. While that heated I got out the Bisquick eggs and
milk and made the basic liquid filling for my impossible pies but in this case
impossible muffin size pies.
Here is what I used:
Ham &Cheese Impossible Muffin Pies
½ cup of Bisquick
1 cup of milk
2 eggs
3 slices of ham (cold
cuts)
2 slices of Swiss cheese
Directions:
Spray muffin tin with Pam or something like that and set aside until your ready to fill the cups.
Place the Bisquick,
milk, and egg in a blender and blend well.
While this is blending
cut up the ham and cheese and fills three muffin cups with it.
Next cover the ham and
cheese with the blended liquid
Cheese Impossible Muffin Pies
You will half of the
liquid left so that part is made.
Cut up at least three
types of cheese in the last three muffin cups and add any leftover onions and
tomatoes that you may have cut up in the refrigerator.
If you don’t have any
don’t worry it’s just a suggestion.
And place in the oven at
400 degrees for 45 minutes.
Give the muffins pies
time to cool down. I put the muffin tin in the freezer for about ten minutes then I can
safely remove each muffin pie easily.
That’s it that’s all
there is too it.
A great treat for dinner
or even to take to work for lunch.
You can use any filling
you want and enjoy this was just my choice for today.
Tonight I will have two of these muffin pies for dinner. One of each and put a cup of apple sauce on the side.

this a try fill each muffin cup with what appeals to you and enjoy this wonderful treat!
