Veal Oscar From The Red Lion Inn


Today I am not only going to be socially incorrect (veal is baby cows) but I am also going to spend too much money on dinner.
Do I care? Not in the least.
I think every once and a while you have to make your favorite dinner and hands down this is mine.
The first time I had this dinner was at the Red Lion Inn in Stockbridge Massachusetts.
The dinner is Veal Oscar.
I have tried to make it as economically as possible but there is no way to make it for two dollars but believe it or not I did make it for six dollars and will use some of the ingredients I use for another meal or two so it will break down to just under four dollars for this dinner.. Those that don’t know what this particular recipe is or has never bought real veal (not those preformed veal patties) cannot even begin to understand how amazing this feat to pay so little for what you need to make this dinner.  Those that do and love this meal as much as I do will be eagerly reading how to do it for this low price.
First I had to have a plan it’s not something you just wing. If you do you will pay double what I did or more.
First I made a list of what I needed and what short cuts I could take without compromising my favorite dinner.
My list made I head to the store.
I went to Gabriel’s in Scotia.
I chose Gabriel’s because they have a great butcher there and I know I will get what I want.
I head to the meat counter and pick up a very small package of veal and take it over to the deli counter and ask them to either slice it thinner or pound it out for me you can do this yourself if you have a mallet but I don’t .
Next I go over to the fresh vegetables. I look at the asparagus and since I can buy it by the pound I pick up four spears.
Next isle is the canned meat department. I need a very small can of crabmeat. Believe it or not if you go with the store brand it’s just as good as the name brand and of course to say money that is what I do. The final stop is the gravies and mixes. I need hollandaise sauce and it’s much less expensive to get the generic package at the store instead of making it from scratch. Now that I am done shopping I head over to the check out holding my breath waiting to see what I would pay for my little spurge.
I was relieved when it came to under six dollars.
Veal is very expensive it can cost over twelve dollars a pound.
You can use beef if you prefer since veal is beef.
Here is the recipe.
Veal Oscar

¼ pound slices of veal
¼ cup of crabmeat
4 asparagus spears
Flour
Salt
Pepper

Directions

Pound Veal or have the butcher do it.
Dredge veal in flour flavored with salt and pepper
Sauté veal in butter.
Remove to serving platter
Place crab mean on top of the veal. This will make two servings of veal.
Top each serving with two asparagus spears each
Serve with Hollandaise sauce.

That’s all there is to it.
Very easy to make and quick.
