Apple Spice Muffins Brought
By An Angel
I bet you
can tell I am reading another book. Yup your right This one is called “ Shadow
Of An Angel”
In the
opening chapter an angel comes to greet someone to welcome them to their new
home carrying a basket of Apple Spice Muffins.
That
sounded so good and I decided to make them. They turned out great.
I did not
add a lot of spice but enough to enhance the flavor of the apples.
Here is
the recipe that I chose.
Ingredients
1
cup bisquick
1/8 cup sugar
½ teaspoon ground Cinnamon
1 egg
1/4 cup applesauce I also added a small apple chopped up but thats optional
1/8 cup milk
1 tablespoons vegetable oil
TOPPING:
1/8 cup sugar
1/8 teaspoon ground Spice
Islands® Ground Saigon Cinnamon
1 tablespoons butter, melted
Directions
In a bowl,
combine the biscuit mix, sugar and cinnamon. In another bowl, beat the egg,
applesauce, milk and oil. Stir into dry ingredients just until moistened.
Fill greased or paper-lined muffin
cups two-thirds full. Bake at 400° for 10-12 minutes or until a toothpick comes
out clean. Cool for 5 minutes before removing from pan to a wire rack.
In a small
bowl, combine sugar and cinnamon. Dip muffin tops in melted butter, then in
cinnamon-sugar. Yield: 1/2 dozen.
This is a good and easy recipe and perfect for a fall weekend like
the one coming up.
Enjoy this one and soon I will post an article on Spice cake that
reminds me of my Aunt Maries.
