Cheese-Stuffed Mini Meat Loaves


The other day I made a quick hamburger for dinner. I decided to put a piece of cheese between two layers of the ground beef to make a stuffed burger.
Today since its Sunday I wanted to make something more in line of a traditional Sunday dinner.
I had taken out about a quarter pound of hamburger from the freezer for dinner today.
I decided I would make my version of a stuffed meat loaf and put the individual meat loafs in a muffin tin.
They turned out good made in my traditional way just adding some cheese I needed to use up in the middle of the meat loaf.
I am glad I did it this way. I don’t have a lot of time today it turns out I have to go meet a friend to pick up some curtains and making dinner would have to be put on the back burner if I had not made my muffin style meat loafs.
Before I leave I will make a meat loaf sandwich on a bagel thin for my dinner tonight. Tomorrow I can make the dinner I wanted for today and still have some mini meat loafs left for another meal. I do like it when I save money and have a really good meal!


Cheese-Stuffed Mini Meat Loaves


Ingredients
·        ½   cup bread crumbs or matzos
¼ pound lb ground beef
·        1  egg
·        Salt and pepper to taste
·        ¼ package of onion mix.
·        ½ cup of spaghetti sauce
Directions
1.    Heat oven to 350°F.
2.    In large bowl,  mix ingredients
3.   Spray 12 regular-size muffin cups with cooking spray. Divide beef mixture evenly among cups (cups will be very full).
4.    Push 1 piece of cheese into center of each loaf
5.   Top meatloaf with sauce
6.   . Place muffin pan on cookie sheet to catch any spillover.
7.   Bake about 30 minutes or until thermometer inserted in center of loaves in middle of muffin pan reads 160°F (outer loaves will be done sooner).
This is a nice way of making a different meatloaf.
Any mini meatloaf’s will be easy to freeze and use for another meal or for lunches.
Serve with mashed potatoes and green beans or the vegetable of your choice.
