Chili-Mac Soup

Chili-Mac Soup

I get recipes sent to me all the time since I started my blog.
This recipe is from Betty Crocker and this recipe is using hamburger helper one of my favorite easy fixes.
A few weeks ago I bought a couple of boxes of the smaller version of hamburger helper and this recipe is going to give me a way to use a box and do something that will warm me up on a cold and rainy fall day.
What I do is read the recipe that is posted by the company and then make some sense of it from an financial and ease of prep point of view.
Of course any company wants you to buy as many of their products as possible. Of course your going to use what you have and whats affordable but they can hope you use theirs and they keep posting these ideals
This is a simplified version of this soup.

Chili-Mac Soup

½ lb lean ground beef
½ medium onions,
  2 ½ cups hot water
1 small box Hamburger Helper® chili macaroni
½ teaspoon chili powder
¼ teaspoon garlic salt
16 oz can diced tomatoes I use stewed that adds green peppers and other veggies.
1 small can of corn or about ½ cup of frozen corn.
few black olives (your choice if you use them I always have them      on hand for pizza but if you  don't and you don't like them don't use them)

Directions

1. Cook beef, onion over medium-high heat 5 to 7 minutes, stirring occasionally, until beef is drain.
2 Stir in hot water, sauce mix (from Hamburger Helper box), chili powder, garlic salt and tomatoes.
 Heat to boiling, stirring occasionally.
3 Reduce heat; cover and simmer 5 minutes, stirring occasionally. Stir in uncooked pasta (from Hamburger Helper box), corn and olives. Cover; cook 10 minutes longer.

While the soup is cooking I will make corn muffins with jalapeño peppers for the corn muffin mix I have in the pantry.
Next I will take a taco shell and make a small toss salad.

This is going to be a great dinner full of Mexican flavor and taste!
Give it a try I am sure you will like it as much as I do.
