Crock Pot – Sausage, Cheddar Cheese & Potato Soup
Yesterday I wanted soup
for dinner and I had to cook up some Italian sausage and I was not in the mood
for sauce.
So I began a search for
soup or stew made with Italian sausage. After a while I decided to make up my
own recipe.
I didn't eat the soup
until today and I recommend you let it sit over night and let all the flavors
blend together.
This is what I made it
turned out really good:
Crock Pot – Sausage, Cheddar Cheese & Potato Soup

Ingredients
·
3 links of Italian sausage
·
1 large potato
·
½ Onion
·
1 celery rib
1 small can stewed tomatoes
·
1 can or box of chicken broth
·
12 ozs evaporated milk
·
2 cups shredded cheddar cheese
·
salt
·
pepper
Directions:
Brown
sausage and onion in a skillet. Drain well.
Place
potatoes, celery and carrot in bottom of crock pot. Add sausage and onion
mixture. Pour chicken broth over vegetables and sausage.
Turn
crock pot to low and cook 4 to 5 hours.
During
the last 5 minutes of cooking add evaporated milk and cheddar cheese.
Put
all the items from the crock pot in the blender except for the broth and blend.
Add
back to broth and stir together.
Do
a taste test for salt and pepper and add,
If a
thicker soup is desired, add -- 1 tablespoon of cornstarch or flour dissolved
in 2 tablespoons of cold water.
That’s
all there is too it.
All
that is left to do is sit down and enjoy it!
You can guess I bet what lunch will be today. I think when I reheat some soup I will put a little bit of cheddar cheese on top of it and butter a matozs and enjoy.
