George Washington Carvers Peanut and Pumpkin Soup
I was cleaning out my pantry and found a can of pumpkin pie filling.
I decided it was time to use it up. Earlier the same day I had been reading my book and an
angel in the book said the George Washington Carver himself had taught her how
to make Peanut and Pumpkin Soup.
I thought about it and wondered if I would like it. Then I though
what was there not to like?
That is when I did some research on the internet and found out some
interesting facts about George Washington Carver.
He was born a slave in 1864
and freed after the Civil War in 1865. He became a distinguished American scientist, botanist, educator, and inventor.
There is so much more this man accomplished in his life time and if you take the time to read his history as I did you would be as impressed and awed by this man.
George Washington Carver also discovered over 300 uses for peanuts. Some of his uses include mock goose, duck, chicken, veal and
oysters, peanut and pumpkin soup, peanut lemon punch, treatment for venereal
disease, face cream, dandruff cure, dyes for leather, cloth, wood stains and
paints, insecticide, and linoleum.
But today we are going to concentrate on a recipe he invented.
Here is the recipe:
Peanut and Pumpkin Soup
2 onions, chopped
2 stalks of celery, chopped
2 Tbs butter
2 Tbs peanut oil
1 quart chicken stock
2 Cups smooth peanut butter
2 Cups fresh or canned pumpkin
chopped peanuts or toasted pumpkin seeds
Directions:
1. in a stockpot, sauté the onion and celery in the butter and peanut
oil until very soft, without browning.
2. Add the chicken stock and
cook for 5 to 10 minutes.
This was so simple to make and enjoyable to eat. After all who doesn't love peanuts and pumpkin!
