PASTA WITH ONIONS
& EGGS
The other night I was
watching “Criminal Minds” this is a TV show about a division of the FBI.
In this story at the end
after the case was solved they went over to one of the members of this FBI group’s
home and he made them dinner.
I was fascinated by what
he made. I had never heard of this before but it sounded interesting so today I
did some research and came up with the recipe for the dinner that was made on
this show.
It’s simple,
inexpensive, and a way to celebrate the true taste of pasta.
Here is the recipe down sized
for our meal:
PASTA WITH ONIONS & EGGS
¼ lb. pasta
2 eggs
1 chopped clove of garlic
½ med. onion
Olive oil
Directions
1, Bring a pot of water to a boil.
2. Slice onions fine and sauté in olive oil with garlic until golden. Set aside.
3. Cook pasta and before draining add a little of the water to the
onions. Drain pasta.
4. Quickly beat eggs with a little salt and pepper, add to the onions,
and pour all over the hot pasta. Toss well and serve immediately with a little
Parmesan or Romano. Serves 2
Since finding this recipe I have found suggestions of what else can go
in this dish. For example, bacon, grape tomatoes, sea food, and much more. This
seems to be a good base for lots of different versions of this meal.
But for today lets stick with baics as I did and just add your favorite
toss salad on the said. Mine would include:
lettuce, onion, celery, chick peas, and a sprinkling from the trail mix
package I get from the dollar store.
I use a poppy seed salad dressing but with this mean any salad dressing
you prefer is fine.
Bring it back to basics and enjoy and keep it simple!
