Ricotta Blintz Loaf


I had some ricotta and wanted to use it for something different. I am just not in the mood for sauce today or anything Italian.
So I did an internet and recipe book search and came up with something called a Blintz Loaf. 
I just put it in the oven and I have to tell you if its as good baked as it is raw this will be outstanding!
Here is the recipe for the:


Ricotta Blintz Loaf


1/2 cup butter, melted
1 lb small curd cottage cheese
1/2 cup Bisquick
3 tablespoons sugar
3 eggs, beaten
Directions:

Preheat oven to 350°.

Butter Glass Loaf Pan.

Melt Butter and put into large bowl.

Add the Cottage Cheese.

Mix until Creamy Smooth

Slowly add the Bisquick.

Add the Sugar.

Add the three Eggs, one at a time, mixing well after each.

Pour mixture into loaf pan.

Bake 350° uncovered, for 40 minutes.

Set aside to cool for 5 to 8 minutes.

Slice about 8 even slices.

Serve with Jam, Preserves or Sour Cream on the side.

To make this part of my dinner I am cooking a pork loin that should be a great addition.
I will let you know how everything turns out.
I finally took the loaf out of the oven and let it cool.
I have to tell you this will move up my list of favorite foods.
Its so creamy and good! I will cook the pork tenderloin and use some of the apple chutney on it and use a little for the Blintz load. I don't know about you but I will be in food heaven tonight!
