I found this on a site called
Beyond Diet. I of course changed the recipe to fit the cost of under two dollars
and still be able to offer a nutritious
meal.
I have been making something like
this for years and until I saw it on their site I guess I never gave it a
though to include it on my blog.
Here is the recipe:
·
Prep Time: 5 minutes
·
Cook Time: 25 minutes

Ingredients
1 ½ Tablespoons flour
½ teaspoon chili powder
½ teaspoon dried parsley flakes
2 skinless boneless chicken breast, cut into 4 pieces
1 (one 8 ounce can) tomato sauce
¼ cup chunky salsa (mild, medium or hot)
½ Tablespoon sugar (or sweetener of choice)
½ teaspoon chili powder
½ teaspoon dried parsley flakes
2 skinless boneless chicken breast, cut into 4 pieces
1 (one 8 ounce can) tomato sauce
¼ cup chunky salsa (mild, medium or hot)
½ Tablespoon sugar (or sweetener of choice)
Directions
Combine flour, chili seasoning,
and parsley flakes.
Coat chicken pieces in the flour
mixture.
In a large skillet with oil (1 Tablespoon), brown chicken for 3 to 4 minutes on each side.
In a large bowl, combine tomato sauce, salsa, sugar and any remaining flour mixture.

Mix well then spoon sauce mix evenly over
chicken.
Lower heat, cover...and simmer
for about 15 to 20 minutes or until chicken is tender.
When serving, spoon the rest of
the sauce mixture over the chicken breasts.
This is a nice change of just
chicken and sauce it brings a new diminution to this meal.
Enjoy!
