Unrolled Pork


The other day I went to Wal-Mart to get the cat food. While there I also decided to check out what specials Wal-Mart had in the grocery department. I found a package of what was called pork tenderloins for a dollar fifty. That was a great price and I decided to give them a try. There were four pork tenderloins in the package. I figured if they were good I would stop back and get a couple more packages.
When I got home I searched the internet for an inspiration to use two of these tenderloins and that was when I found a recipe for rolled pork. That’s not what I could make with these tenderloins but I did like the recipe. So I made the recipe and I am calling them unrolled pork tenderloins.
Now don’t worry about the one ingredient in this recipe its called jerk spice. It’s not going to taste like  jerk chicken its going to taste like the recipe you intend on cooking. Now let me give you the recipe for this meal of unrolled pork.

Unrolled Pork

2 tablespoons brown sugar

1/ 2 teaspoon Caribbean jerk seasoning

 2 pork tenderloin

1 small apple, thinly sliced

2 tablespoons sweetened dried cranberries

 1 large potato, peeled, cut into 1/2-inch-thick slices

2    tablespoons water

2 teaspoons all-purpose flour


Directions

1 Spray 2 1/2- to 3 1/2-quart slow cooker with cooking spray. In small bowl,     stir together brown sugar and Caribbean jerk seasoning.
2 Place pork tenderloin in crock pot
Sprinkle with 1 teaspoon of the brown sugar mixture. Top evenly with apple slices and cranberries. Starting with one
3 Place potato slices in slow cooker. Top with pork
4   Sprinkle with remaining brown sugar mixture. Cover and cook on low heat setting 4 to 5 hours.
5 about 5 minutes before serving, in 1-cup microwavable measuring cup, stir together water and flour
6.  Stir juices from slow cooker into flour mixture. Microwave on High 30 to 60 seconds, stirring once, until mixture boils and thickens slightly. Cut pork into slices; place over sweet potatoes. Pour sauce over top. If desired, add salt and pepper.

I served this over a bed of rice and the balance of the applied on the side.
The flavor was very nice almost sweet and sour with a little twist with the addition of the spices.
It tasted great and I liked the pork I got in this package so I will go back and get a couple mor
