Biafrin Stew
Biafrin stew is a traditional
Nigerian recipe from the region known as Biafra. I made some changes to the original recipe and it improved the flavor 100% percent.
This was not the first or last African recipe that I made for my family but this meal became my moms favorite . African cooking became a staple in the dinners I prepared for my family.

Biafrin Stew
Ingredients
1/2 lb chuck steak,
cubed ( I use any steak that is on sale)
1lb chicken pieces
( I use boneless)
1 14oz can whole
tomatoes
1/2 jar chunky salsa
1/2 jar chunky salsa
1 green pepper, coarsely
chopped
Or 4 mini colored peppers chopped
Or 4 mini colored peppers chopped
1 yellow onion, chopped
1 tsp. Tabasco sauce/ 8
drops of Franks Red Hot (I use Franks)
Salt and pepper to taste
Instruction:
Brown the beef if you want I don't.
Put all the ingredients in the crock pot and cook on high for 4 hours or until done.

I have always served this over Rice but if you like Couscous
that is the traditional way to serve it. I don't like Couscous that's why I
use rice.

My mother told me about this recipe. She has made it several times over the years. She used large pieces of chuck roast and cut up a whole chicken into wings, thighs, legs and breast. She served over couscous.
