Bistro Chateau Steak From Pin Head Susan’s
A few days ago I went to
Pin Head Susan’s for dinner. It is a popular restaurant in Schenectady NY.
My friend that treated
me to dinner asked where I wanted to go for my birthday dinner and I knew she
always wanted to try this place so I suggested we go there. I have been there
several times and have never had a bad meal.
Prices are par for the
course so there were no surprises.
When we got there we
ordered drinks. Since I was not driving I ordered pale ale and she ordered a
glass of wine.
We looked over the menu
and I was going to order fish. I love cod and it sounded good and would be
perfect with the ale I ordered, but she insisted I order a steak.
She knows I don’t often
cook steak and felt this would be a nicer treat than fish since I do make fish
on a regular basis. Heavens knows what she would have said if I had ordered the
pork chop that was the special that day since I am a confessed pork aholic! I
didn’t want to argue so I looked at the menu again and found something that
sounded good.
I ordered the Bistro
Chateau Steak, which was broiled steak
with blue cheese topping. I had never
had blue cheese on a steak before but how bad could it be?
Then to begin the meal I
had a side salad. The steak when it arrived had mushrooms and onions with it. I
think the mushrooms and onions could have just as well been left off it was over kill as far as I was concerned, but
the steak itself was the best flavor I have ever had!
I am not a big eater so
I had a lot of steak left over and almost half of my salad.
Since I enjoyed the
steak so much I wanted to duplicate it.
When it was cold I
tasted it when I made a salad and sliced some steak on top of it with blue
cheese dressing. I learned how to make this salad at the same restaurant. I had
enough steak left to use for another meal and when it was heated again I
smelled it. I figured out what spices were used and how to top the steak with
the blue cheese.
Tonight I made a small
steak that I got at Hannaford’s last week at half price. People for some reason
don’t buy that kind of steak for marinating and baking very often so the store
always has a nice supply marked down.
When I ready to make the
steak I heated the oven to 35o degrees and rubbed in some garlic powder, sea
salt, and fresh ground pepper.

I then basted the top of
the steak with blue cheese and put it in the oven for about 45 minutes.
When I took it out I topped
it with more blue cheese.
I had made mashed
potatoes earlier with cream cheese and sour cream for the holidays and froze
half of the potatoes and used the rest to go with the steak. I then used the
balance of some left over peas I had from the other night.
I think I liked my steak
even better than the one I had at the restaurant. It did have all the same
flavors and I did duplicate it successfully. But I think the fact I used
freshly ground pepper made a big difference.
I also liked the mashed potatoes and peas with the dinner better than
the side salad.
I guess it’s all in what
mood you’re in on any particular day what will taste the best when dinner is
ready.
The next time you make a
steak give this idea a try. I had never thought of using blue cheese on top of
a steak before but I will think of it next time I make a steak again because it
was a truly successful way to make steak!
