Making Tex-Mex Chicken Dinner Go Further
I have always suggested
getting creative with leftover’s and that is what I am doing today.
I am going to extend the
leftovers from yesterday.
Just as a reminder this
is what I made:
Here is the recipe:
Tex-Mex Chicken
INGREDIENTS:
1 Pound boneless
skinless chicken
breasts, cut into strips
2 Tablespoons taco
seasoning mix
(any brand packet)
2 Tablespoons flour
1 Each: green and red
pepper,
cut into strips
1 Cup frozen corn
1-1/2 Cups
thick-n-chunky salsa
1 Cup Mexican shredded
four cheese
DIRECTIONS:
1. Toss chicken with
seasoning and flour in Crock-Pot slow cooker.
2. Stir in, vegetables
salsa, and cheese and cover.
3. Cook - Serve with
cooked rice
3-4 hours on HIGH
6-8 hours on LOW
I found there was a lot
of favorable sauce left after having this dinner yesterday.
I being someone that
wastes nothing decided to make another meal with the left over juice.
Today I browned some
ground beef, sauce, and onions
Next I made a cup of
rice in the microwave flavored with a couple of tablespoons of onion soup mix.
If you prefer you can use one cup of beef broth (I get the box of broth at the
Dollar Tree)
When the rice was done I
added the ground beef and sauce to the rice.
Now that we are aware
how much sauce this recipe makes you could always double the rice you cook when
you make this recipe in anticipation of reusing the juices for another meal.
Then all you would have to do for the next meal is brown the ground beef and
onions.
It’s always nice don’t
you think when you can make a meal go further than expect as this one did?
Nothing about this meal
will cry out leftovers. So for those of you that don’t like to eat leftovers
this recipe may be just right for you!
No matter it made a
great meal with lots of flavor!
