Sesame Chicken And Vegetables
Yesterday was the day
the refrigerator needed to be cleaned out and leftovers needed to be made into something for
dinner.
I knew the first
ingredients were going to be sesame seeds. I had seen a picture of sesame seed
chicken and it made my mouth water. I love sesames almost as much as I like
coconut and that is saying a lot!
Now the adventure would
begin to find the ingredients left over from the week and turn it into a dinner
that would go well with sesame seeds.
The first thing I pulled
out of the refrigerator was a half bag of harvest vegetables from Hanover. It
contained broccoli, red peppers, baby corn, carrots, celery, and water chestnuts. Great
this would most defiantly go with sesame seeds!
Next I checked out the
top shelf of the refrigerator. There sat a carton of chicken broth with about
one cup of broth in it. That took care of all the
leftovers I had. Now I needed to check the freezer for additional inspiration.
Then on the third self I
found it! I had purchased two bags of ready cooked chicken breast fillets (small boneless, skinless chicken breasts) made by Tyson’s.
I took three of these frozen
chicken breasts from the bag and added them to the things being accumulated to
make dinner.
Now I had to put it all
together. I knew I did not want the oriental version of Sesame Chicken but with everything I had put aside to make dinner it
seemed to be leaning that way.
I decided to go to my trusty recipe site Cooks.com and checked though several recipes and came up with one of my
own using the ones I found as a guide.
This is the meal I made.
Sesame Chicken And Vegetables
3 ready to serve boneless skinless chicken breasts
½ bag of frozen Hannaford’s
Harvest Vegetables
1 cup of rice
1 cup of chicken broth
1 tablespoon of sesame
seeds
2 tablespoons of soy
sauce
2 tablespoons of oil
Dash of lemon juice.
Directions
Brown the sesame seeds
in a little oil or butter. It will take just a couple of minutes on med heat stirring
all the time.
Remove the sesame seeds
to a smaller dish until ready to use.
Next mix the soy sauce
and oil together and put in plastic bag or in a dish and cover the chicken you
have cut into strips with the sauce.
Next add the chicken to
the same pan you used to brown the sesame seeds. Raise the flame under the pan
to high and stir fry the chicken and the sauce for about three minutes.
Remove the chicken from
the pan and set aside.
Now add the vegetables
and stir fry them until heated though and add to the chicken and toss together
in a serving bowl. Add just a drop of lemon juice as you toss not enough for
taste but to brighten the flavor of the vegetables so they hold their own with
the chicken.
Once the chicken and
vegetables are mixed add the sesame seeds and toss lightly.
Set aside the chicken and vegetables until you make the
rice for the dinner in the microwave.
I cup of chicken broth
and 3/4 cup of rice covered and cooked for five minutes in the microwave.
Spoon the chicken mixture over the rice and add the sesames you browned to the top of the chicken.
You’re now ready to enjoy your dinner.
I loved the flavor it had a salty taste from the soy sauce and the taste of the vegetables was brought out by the little bit of lemon juice.
Loving sesame seeds I topped the chicken and vegetables with a few
raw sesame seeds because I love sesame seeds both
cooked and raw and it added that extra something I wanted from this meal.
Now my refrigerator is
cleaned out and I enjoyed a wonderful meal from what was left over and there is
no wasted food.
There also was enough
left to put a mean away in the freezer for a second dinner.
To me that is a win,
win!
