Tex-Mex Chicken
Lately I have been cleaning out the refrigerator, pantry, and freezer. It’s to me to restock. I pulled out some salsa, green pepper from my garden, and Mexican cheese, from the refrigerator, next I got the chicken from the freezer.
Next I checked on line to find a recipe that would use these items.
I found a recipe believe it or not on Walmart.com. It was Tex-Mex Chicken that was ideal.
I was not looking there for recipes I was checking prices for my neighbor on crock pots when I came across a long line of crock pot recipes.
Today we will make the Tex-Mex Chicken I found on Walmart.com. I didn’t have all the ingredients but when I checked the pantry I did have the basics and got the meal started.
Here is the recipe:
Tex-Mex Chicken
INGREDIENTS:
1 Pound boneless skinless chicken
breasts, cut into strips
2 Tablespoons taco seasoning mix
(any brand packet)
2 Tablespoons flour
1 Each: green and red pepper,
cut into strips
1 Cup frozen corn
1-1/2 Cups thick-n-chunky salsa
1 Cup Mexican shredded
four cheese
DIRECTIONS:
1. Toss chicken with seasoning and flour in Crock-Pot slow cooker.
2. Stir in, vegetables salsa, and cheese and cover.
3. Cook - Serve with cooked rice
3-4 hours on HIGH
6-8 hours on LOW
I didn’t have the corn but that’s not a problem and I changed the type of chicken I used from chicken strips to chicken wings since I packages of wings. I did have the rest and it didn’t bother me that I had to make it the way that was convenient for me. I can tell you that the aroma from the crock pot is making my mouth water and I am looking forward to dinner tonight.
This is a simple and really good recipe well worth trying.
