The Day after Thanksgiving
It’s the day after Thanksgiving
and dinner yesterday was great!
We all ate too much and tell
ourselves we never want to eat like that again or for that matter look at
another piece of turkey!
That is until it’s time for lunch
and the leftover turkey is looking pretty good again.
I love turkey and yes I could eat
it for several days in a row but since I make turkey all year long I am not
going to do that. I will be a bit more practical and make a few meals to put
away for another time.
I have plenty of wonderful gravy
and lots of turkey left. I also bought a box of Stove Top Dressing that I will
be making up today for dinner on Saturday when a friend is coming over for a
late lunch so some of that will go in the baggies for another time as well. It makes sense. Have you ever gone
to a diner and seen the hot beef and hot turkey sandwiches on the menu? That’s all
I am doing here. Anytime I want this diner special all I have to do is reach in
my freezer and take it out. Now how good is that?
Today I will have a small steak
for dinner and meanwhile I will take some sandwich baggies and start putting
away turkey and gravy with a side of dressing for another day.
It takes about three thin to
medium size slices of turkey and a small scoop of gravy for each turkey and gravy
dinner you are putting away. That will make up about three meals to put in the
freezer.
Then tomorrow I will have enough
turkey to make my friends favorite sandwich of dressing, cranberry sauce and
turkey.
She will be coming from the
dentist so I have to get creative in
case her tooth is painful and she is unable to chew properly I will make sure
she will be able to enjoy her lunch.
I told her what I will do is make sliders out
of the King Hawaiian Rolls (those are dinner rolls we all love around here) and
chop up the turkey so no matter what the condition her teeth are in she can
still enjoy her sandwich. She was so pleased I was willing to do that for her.
But then again don’t we always take an extra step for a friend when they need
us to?
I will serve some of my fantastic
red cabbage salad on the side and if I get ambitious today I will make some
potato salad.
That should use up the balance of
the turkey from Thanksgiving if not I will make up a doggie bag for my friend.
‘She is not going to be making turkey this year because she is going to have
dinner at the nursing home with her great aunt.
Next month once I get paid I will
go back to Aldies and get at least four more of these turkey breasts. They are
truly a great value when you consider they are all white meat and boneless.
Once I get them home I will let
one turkey breast defrost enough to carve. Remember almost any meat can be refroze
if it remains cold to the touch. That way I can refreeze the turkey when I am
ready. The reason I am cutting this turkey breast into slices is that this
summer I want to make turkey cutlets on my bbq grill.
Turkey can be kept frozen for up
to a year without losing flavor after a year it will begin losing its flavor.
