Slow Cooker Chicken Marsala
Today I decided I had earned a good dinner
because for the last three days I have been dealing with cable issues.
Finally today after two technicians and eight
calls I again have internet and I have a phone even though the number has
changed again. No matter dinner is on my mind now.
I decided to put something really yummy in the
crock pot. Let’s face I deserved it!
I chose to make a recipe I found for

Recipe Slow Cooker Chicken Marsala
1 cloves garlic, finely chopped
½ tablespoon vegetable oil
2 boneless skinless chicken breasts
1/4 teaspoon
salt
½ teaspoon
fresh ground pepper
½ cup sweet Marsala wine or Progresso® chicken broth (from 32-oz carton)
½ cup water
1/8 or a couple tablespoons of cornstarch
Directions

Spray 4- to 5-quart slow cooker with cooking spray. In cooker, place
garlic and oil. Sprinkle chicken with salt and
pepper; place in cooker over garlic. ; pour wine over all.
2 Cover; cook on Low heat setting 5 to 6
hours .
3 Remove chicken from cooker; place on plate
and cover to keep warm. In small bowl, mix water and cornstarch until smooth;
stir into liquid in cooker. Increase heat setting to high; cover and cook about 10 minutes or until sauce is slightly thickened.

Return chicken to cooker. Cover;
cook on High heat setting 5 minutes longer or until chicken is hot.
Now if you want to dress up this
meal add canned or fresh mushrooms personally I get cravings for water chestnuts
and I love it with this meal because I
love the crunch of water chestnuts. You don’t like water chestnuts? Doesn’t
matter as always this is your meal so do it your way and think outside the box
this is about you not me.
If your store sells parsley by the weigh pick
up a small amount it will add a fresh herb flavor to your meal.
It’s not essential it’s just a little
extra that can take this meal over the top.
I will put it over white rice and if I am
very hungry I will make a green salad.
All I know is I love Chicken Marsala
and this time I am making it a home instead of buying the TV dinner at Aldies!
