Time to think of New Years Day Dinner 




I know everyone likes New Years Eve. The celebration, the music, the end of a year that everyone is glad to see be gone.
I like New Years Day. It’s a time of renewal and hope. That’s why that day is so special to me and that is why I fix a special dinner for New Years every year.
In years past when I was an antique dealer and my family was still here we use to attend a New Years Day auction and after we would have an open house.
I would prepare a buffet for everyone to enjoy. It consisted of Ham salad and Split Pea Soup.
Of course there were other foods to choose from but this was the center of the buffet.
Now year’s later things have changed. My family is gone and I am not longer part of a family run antique shop.
I do still sell antiques on line but I no longer host an open house. I don't even live in the same area anymore.
These are great memories but I think it’s time to make a change on what I will make for this special day.
Instead of pea soup and ham salad. I have decided to make ham steaks, loaded mashed potatoes by Betty Crocker and Asparagus.
I will make a pie for friends but I cannot get a straight answer from anyone  what kind of pie.
So It will either be Lemon Cream Pie or Coconut Cream Pie.
My choice is always Coconut but I may decide to make both pies. After all I will be sharing the pies with others so why not two?
I don't have to give you the recipe for the dinner that’s pretty straight forward, but let me give you the recipes for desert.
They are such easy recipes to make!
Here is the recipe for Lemon Cream Pie also known as Lemonade Pie

Lemon Cream Pie or Lemonade Pie

1 graham cracker pie crust
1 cans eagle brand milk
1 6 oz can frozen lemonade concentrate
1 8 oz tub cool-whip

Directions

Allow lemonade to thaw at room temperature. Mix together eagle brand milk, lemonade and cool whip.
Pour into pie crust and allow to chill before serving.

EASY TOASTED COCONUT CREAM PIE

           
2 pkg. instant vanilla pudding
2 c. milk
1 sm. container Cool Whip
1 tsp. vanilla
1 sm. can or package of coconut
1 (9 inch) pie crust, baked or graham cracker crust.


Directions

Mix the pudding and milk together. Let set a few minutes in the refrigerator. Fold in the Cool Whip and vanilla. Add toasted coconut. Pour into pie crust and top with more coconut. Refrigerate.

Here is a secret for both pies. If you don't want to eat them all at once freeze them! They are awesome frozen!
