GRILLED CURRY CHICKEN BREASTS WITH SPINACH RICE
I
found this recipe and though it sounded so good and so fresh just what we need
this time of year.
It
is easy to make and not much to do.
It
calls for being cooked on a grill. I do have an indoor grill but if you do not
don’t worry just use your frying pan.
I
have included the substitution for curry powder in case you don’t have this
spice on hand. You can use chili powder and most of us have this in our
pantries.
If
not it can be bought at the dollar tree.
Here
is the recipe:
GRILLED
CURRY CHICKEN BREASTS WITH SPINACH RICE
INGREDIENTS:
¼ cup white rice
½ cup
baby spinach
¼ tsp salt
dash
of fresh ground pepper
¼ tsp ground cumin(substitution chili powder)
1 boneless, skinless chicken breast halves
1
Tbsp canola oil
¼ tsp curry powder(substitution chili powder)
DIRECTIONS:

Preheat grill or frying pan

Cook rice according to package directions. Fluff with a fork. Stir in spinach,
1/4 tsp salt, pepper, and cumin (chili powder substitution). Cook until warm.
(All this can be done in the microwave)
3.
Coat chicken on both sides with oil. Mix curry powder and 1/4 tsp salt in a
small bowl and rub onto chicken.
4.
Grill (can also be made in a frying pan on the stove) chicken over medium with
lid closed for 10 minutes, turning once, or until cooked through. Serve with
rice.
If
you have frozen or canned spinach you can also us this. Be sure to drain well
then dry off by rolling and squeezing out extra moisture in a paper towel.
