Heartland Pork Stew


I don’t know about you but I do like stew but sometimes I want to have a different kind of stew other than the standard beef stew. Then I found this recipe and it so I thought I would give it a try.
Here is the recipe one I made necessary changes to make it affordable and downsized it to a serving for one or two people:

Heartland Pork Stew

Slow cooking results in moist pork and tender sweet potatoes swimming in a savory sauce.

Ingredients

•        2 pound pork boneless cut into 1-inch pieces
•        ¼   teaspoon salt
•        ¼   teaspoon pepper
•        1 tablespoon vegetable oil
•        1 medium dark-orange sweet potatoes, peeled and cut into 2-inch pieces
•        1 small package frozen baby lima beans
•        1 cup chicken broth
•        ¼   teaspoon salt
•        ¼   teaspoon dried thyme
•        ¼   teaspoon dried sage
•        ¼   cup water
•        2   tablespoons cornstarch

Directions

1.    Sprinkle pork with 1/2 teaspoon salt and the pepper. Heat oil in 12-inch skillet over medium-high heat.
2.   Cook  pork in oil 5 to 8 minutes, stirring occasionally, until pork is brown; place in 3- to 4-quart slow cooker.
Add sweet potato, frozen Lima beans, broth, ¼ teaspoon  salt, the thyme and sage to pork in cooker.
     3. Cover and cook on Low heat setting 7 to 8 hours.
     4. Stir together water and cornstarch; stir into pork mixture.   Increase heat setting to High. Cover and cook about 15 minutes or until mixture is thickened.

It was moist, tender, savory and so good!
