Homemade Hash And Poached Eggs

I was talking to a friend today and we were talking about the foods from our childhood that we loved.
Now I know I have told you before my mom did not cook well more actually did not really know how except for a couple of things she did make well.
One of the things mom did make on occasion was corned beef hash and poached eggs.
Of course the hash was canned and mom had the pan that made it easy to make poached eggs.
That’s not what this recipe is today. Its home made hash and poached eggs made in water and vinegar.
I think that homemade hash is the best don't you?
It is also sensible as we get into march and corned beef and cabbage is on the menu.
Left over corned been is always good but corned been being made into hash is even better.
Here are the recipes and the has is mouth watering.

CORNED BEEF HASH      

6 pieces of cooked bacon
¼ lb. cooked corned beef, finely chopped
½ lb. cold boiled potatoes, finely chopped
3 drops Franks Hot sauce
¼ cup water
2 tbsp. butter
Sea salt, to taste
Cracked black pepper, to taste
¼ tsp. Old Bay seasoning (optional)

Directions

Cook bacon until crispy
. Melted the butter in the water,
Add all the to the water and butter, and cook until thoroughly heated through, then put into a baking pan and place in the oven until brown on top.
If you don’t want to be bothered making the corned beef buy it at the deli but get the real corned beef not the fat encrusted corned beef that is a little cheaper. Believe me it’s worth it and will work fine.

VINEGAR POACHED EGGS     

2 eggs
1. Skillet full of hot water
¼ c. apple cider vinegar
Lg. slotted or perforated spoon
Heat the water until you get a slow rolling boil.
Add the vinegar to the water.
Break the eggs, one at a time, into a cup or bowl,
Slowly tip them into the boiling water.
Cook them until the whites are set good (2-3 minutes).
Remove with the spoon and place on a plate that you have covered with 2-3 paper towels.
Roll the eggs around slightly so as to remove all the water.
 Place on hash
When you poach eggs like this they stay in a nice round ball.

When I serve this I like to have some applesauce on the side and a slice or two of toast.
It completes it for me.
