Incredibly Delicious Chicken & Dumplings!




Yesterday I stopped at the Dollar Tree to get a couple of things.
But as always I got more that I expected. They had just gotten in some spices and before I knew it my basket was full of spices.
Today I found a recipe for Chicken and dumplings that was amazing and of course like a kid I wanted to use my new spices.
This recipe is so good it will be hard to stop eating it!
Here is the recipe:


INGREDIENTS: 

2 cups chicken broth
½    cup water
1 Tbsp unsalted butter
½ tsp poultry seasoning
½ tsp onion powder
½ tsp garlic powder
½ tsp sea salt
½ tsp dried parsley
1 tsp dried basil or Italian spices
½ tsp black pepper
½ lb boneless, skinless chicken breast (that’s about two chicken breasts but I added 4 I wanted to have some for another day)
½ cup all-purpose flour
1 ½ cups milk
1 cups frozen peas and carrots

Dumplings:

1 cups flour
½ Tbsp baking powder
¼ tsp sea salt
1 Tbsp butter (softened)
½ cup milk



DIRECTIONS:

In heavy bottomed Dutch oven aka or pot, over medium heat, add chicken broth, water, butter and all seasonings. Cover and bring to a boil.

2. Meanwhile, cut chicken breast into bite sized pieces. Add to soup mixture. Stir to combine and cover.
 A short cut here of course is to use your Perdue already grilled chicken breasts. Today I did a combination I cooked two and used two of these already cooked chicken breasts.

3. In a sealable container combine flour and milk. Seal tightly and shake vigorously to combine well. You will create a smooth flour mixture for thickening your sauce called slurry...
  Ok you know I didn’t do that! I got out my handy dandy blender and it worked fine!
 Slowly pour the slurry into broth, stirring constantly. Add frozen vegetables. Cover.
Cook for about 30 minutes.

4. Combine dumpling ingredients in a medium bowl. Mix well with a fork.
 Remove cover from stew and stir well. Drop dumplings into stew one tablespoon at a time; use a 1 tablespoon scoop to make it even easier. Reduce heat to simmer, cover and cook for 10 minutes. Serve and enjoy!

Don’t worry if you don’t have everything in the recipe. For example I was out of Basil I used Italian seasoning instead it worked fine. I also didn’t have frozen carrots. I don’t really care for cooked carrots and frozen carrots are too mushy for my taste. So I took a half a cup of baby carrots that were on sale this week at Gabriel’s for a dollar a bag and chopped them up put thin in a sandwich bag then a small bowl and put them in the microwave for three minutes. Then I added them to my pot.
Worked great.
Always think outside the box when you are making a meal. Yes it’s good to follow the original recipe as closely as possible but I was not about to run to the store for the Basil and frozen carrots.
I have a couple of invalids on EBay who need me to do some shopping for them and I will do that on Monday so I don’t intend to go to the store again today.
