LIGHT ITALIAN MEATBALL SOUP

Did you make the tomato soup the other day like I did and you have a cup or two left over?
Yes me too.
Today I am going to make a dinner from the remainder of the soup.
Today’s soup is going to be Italian Meatball soup.

Now this one is tough, just kidding.
All you have to do is add a few of the meatballs you have in the freezer Iike I do that I picked up when put them on sale.
Price Chopper puts Mama Lucia Italian meatballs on sale about once a month and that is when I get them if I am running low. Their usual offer is buy one get two free. Now how can you go wrong with that kind of offer?
Plus these are the only meatballs I like besides the homemade ones at Gabriel’s.
I suppose I am a little obsessed with this store and your saying glad you have such a nice store but we don’t have one near us. Maybe you do.  Gabriel’s is an IGA. If you have an IGA near you why not check it out? I have never found an IGA that didn’t have owners that made sure their products are top of the line. The owner of this one just took it over the top a little making it more of a boutique shop than what you usually find. In fact they don’t even put ads on their windows like most stores do. I like that and I like the memories of this store when my mom was alive and she was being treated for cancer. We scheduled her treatments so we could stop at this store and buy their fresh out of the oven bread. It always made her happy and it makes me happy even all these years later thinking about it.
OK let’s get back to the soup,
What I did was heat the soup and adds a little more Italian seasonings and some left over tomatoes I had in the refrigerator that I had to use up.
After the soup was heated and I had heated up the meatballs for two minutes in the microwave I spooned the soup over the meatballs like you would a sauce but of course I used a soup bowl.
I then topped the soup with some grated Parmesan cheese.
While I was making the soup I put some of the now a little stale crusty bread in the oven.
First I sliced it and then buttered it with olive oil that I then topped with Italian seasonings and some of the chopped ready to use garlic I have in the refrigerator. If you still haven’t gone to the Dollar Tree to get some then use your garlic salt or garlic power on the top but go lightly a little goes a long way.
I like the garlic bread on the side of the soup but you also can put the bread on the bottom of the bowl like you might with onion soup then put the meatballs on top and then cover the bread and meatballs with the soup. Whichever way you like it this was a great meal that tasted so good!

Quick Tomato & Pasta Soup

Ingredients
•1 ½ teas of  garlic, minced or 1 teas of ready to use minced garlic
•        1 teaspoon dried Italian seasonings
•        1/4 teaspoon crushed red pepper (optional)
•        1  28-ounce cans crushed tomatoes
•        ½  cup water
•        2 teaspoons sugar
•        1 cup nonfat or low-fat milk
•        ¼ cup pasta

Directions

1.       In crock pot add all ingredients except milk and pasta
2.      Cook on low for five hours
3.      Add cooked pasta and milk during the last half hour of cooking.
