Portuguese Chorizo and Kale Soup
This
hands down is my favorite soup. I saw it made years ago on the Food network by
Rachel Ray.
I tried
it the next day and absolutely fell in love with kale and this soup.
When I
make this soup I don’t cut corners and I don’t make a smaller batch.
If I am
going to make this soup I want some for the next day lunch and a few cups to
put away for another time.
Here is
the recipe.
Ingredients
3
medium white potatoes
2
medium onions, chopped
4 to 6
cloves garlic, chopped (about three teaspoons of chopped garlic from the jar)
2 bay
leaves, fresh or dried
1 pound
kale, coarsely chopped
Coarse
salt and pepper
1
(15-ounce) can garbanzos (chick peas), drained and rinsed
1 can
diced tomatoes
1 pound
diced chorizo, casing removed (you can buy already cooked chorizo in the area
where hot dogs are)
1 quart
chicken broth
Warm,
crusty bread
Directions
I make
this in the crock pot and let it simmer on low for five hours.
You
will not regret taking the time to make this soup because it is so good and
step above and different from other soups.
Serve
this with crusty bread or rolls.
