RASPBERRY& Ginger Sweet and Sour Pork
Today
I was in a creative mood and to get an inspiration
I
decided to look though the freezer, refrigerator, and pantry and come up with
an idea for dinner.
As
I searched the refrigerator the meal I wanted to make almost created itself.
The
first thing that caught my attention was the seedless raspberry jam someone had
given me for Christmas.
I
wasn’t using it because I prefer natural jam instead of a sugar laden jam.
I
thought to myself this might be a good time to use some of this jam instead of
just letting it sit in the refrigerator.
Next
I took soy sauce and vinegar from the refrigerator and added it to jam I had
placed on the counter.
The
idea of a sweet and sour dinner for this
evening was beginning to take form in my mind and I knew the jam would add a
wonderful flavor that would be different than if I had just used sugar.
Next
I went to the pantry and took out a small onion, and the ginger fell out as I
was reaching for the water chestnuts and I said to myself why not and added the
ginger to the items I was gathering for
making this diner.
Next
what meat to use? Maybe shrimp, chicken, beef, no it would be pork.
Last
week I went to do my shopping at Gabriel’s
in Scotia.
I
didn’t need much this month so I could go to Gabriel s for what I needed and a big plus for the pork aholic is this store is
almost always where I prefer to buy pork. I can depend on getting the best and
freshest cuts there.
Lucky
for me pork was on sale and I was able
to buy a couple of packages of boneless pork loin for under three dollars.
I
had used one package of pork last week to make stew and would use this last
package this week for this meal that I intended to create.
The
dinner turned out great, it had a distinctive sweet, sour, and fruity flavor
that I really enjoyed. I decided that I
will use jam again when I make a sweet and sour dinner. Perhaps marmalade as
the sweet taste when using sea food or fish. That should be really good.
Here
is the recipe I came up with. I hope you give it a try if you enjoy sweet and
sour.
RASPBERRY& Ginger Sweet and Sour Pork
INGREDIENTS:
2 pork chops cut into cubes
1 tsp salt
¼ tsp pepper
2 Tbsp olive oil
1 small onion, sliced
1 can of water chestnuts
1 cup broccoli
¼ tsp pepper
2 Tbsp olive oil

1 Tbsp white-wine vinegar
1 Tbsp water
1 Tbsp soy sauce
1 tsp ground ginger

DIRECTIONS:
1. Chop
pork into cubes
1. Season pork with salt and pepper.
2. in a large, nonstick skillet, heat oil over medium for 30 seconds.

Add pork and begin browning for about five to minutes
3. Add onion,
broccoli, and water chestnuts to the pan and
sauté for 8 minutes. Or until everything is
heated though
4. Remove
vegetables and pork to a large plate.
5. In same skillet, combine jam, vinegar, water, soy sauce, and ginger. Whisk over low heat for 2 minutes. Add pork and vegetables and stir.

Serve as is or over rice
