Vegetable Stuffed
Peppers
I bet that got your
attention!
Ok there is more than
just vegetables but it is about three quarters of what’s in these stuffed
peppers.
Two things gave me this
idea. First I had a lot of left over fresh vegetables that needed to be used
up. Second I need a good nutritious meal.
The last three days I
have been working so hard that I have skipped all but maybe an English muffin
for breakfast.
When I tried to have my regular
meal of one package of oatmeal and what I usually put in it this morning I
could only eat half of it.
I need to lose weight
but I also need to enough to get the nutrition I need on a daily basis. So
taking all this into consideration I decided a good meal was in order.
I had taken a chicken
patty out of the freezer last night and now I was deciding what made for
dinner.
I pulled out of the
refrigerator a half of a red pepper, half of a yellow pepper, celery, onion,
and cheese sauce.
I decided that I would
use most of the peppers to stuff so I chopped up the rest of the vegetables,
and trimmed off some of the peppers and chopped them up to use in the stuffing
as well. Next I took the chicken patty and added that to the vegetables. I then
added one egg, Italian bread crumbs, and a little mike and seasoned the
stuffing with some fresh ground salt and pepper.
I mixed all this
together and stuffed the two peppers. I then topped the peppers off with some
cheese sauce.
Next I got some asparagus
and cauliflower out of the freezer and put it in an oven safe dish and added
salt, pepper, orange peel then topped it off with the balance of the cheese
sauce.
Now all I have to do
bake these two things in the oven when its time.
When it was time to make
dinner I put the peppers in the oven at 350 degrees and let them bake slowly
for an hour.
A twenty minutes before
the peppers were done I put the vegetables in the oven to bake.
When the hour was up I
took the peppers out of the oven and let them rest for ten minutes so the
juices would go back into the meat and the peppers would be juicy and full of
flavor.
When dinner was ready I
could hardly wait to sit down and enjoy it.
The mild flavor of the
chicken patty was really good but did not over whelm the fresh taste of the
vegetables.
I even enjoyed the
vegetables I made as a side dish.
I only could eat half of
one pepper and some of the vegetables but it was so good and satisfying. If you

I think this is going to
be my favorite way to make stuffed peppers from now on.
It just might become a
favorite of yours as well!
